4 cups sliced peeled potatoes

8 boneless pork chops, about 1-inch thick
1 large Spanish onion, sliced in half then slice each half into thin slices
2 (8 ounce) cans mushroom stems and pieces, drained well
10 cherry tomatoes, sliced in half
2 (6 ounce) boxes savory herb Stove Top stuffing mix, prepared as directed
2 (10 ounce) cans cream of mushroom soup
1 cup shredded cheddar cheese
1/4 cup olive oil
4 tablespoons butter
garlic salt
black pepper

  • Preheat oven to 325 degrees.
  • Heat olive oil and butter on medium high heat until butter is melted.
  • Season pork chops with garlic salt and pepper to taste, brown briefly on both sides, you will have to do at least 2 batches.
