1 (6 inch) fat free tortillas
1 cup salsa
3 cups romaine lettuce, shredded
1/2 cup low-fat cheddar cheese
1 medium tomatoes, chopped
4 scallions, thinly chopped

Steps:

  • Drain the pinto beans, reserving 2 tablespoons of the liquid.
  • Rinse the beans and puree with the reserved liquid in a blender or food processor.
  • Spray a 7 inch nonstick skillet with nonstick spray and set over medium high heat.
  • Add 1 tortilla and cook until golden, 1-2 minutes on each side.
  • Repeat with remaining 3 tortillas.

1 (16 ounce) can refried beans
1 (8 ounce) package cream cheese, softened
1 (16 ounce) container sour cream
1 (16 ounce) jar salsa

1 green bell pepper, chopped
1 bunch chopped green onions
1 small head iceberg lettuce, shredded
1 (6 ounce) can sliced black olives, drained
2 cups shredded Cheddar cheese

1 cup salsa, divided
2 cloves garlic, minced
2 tablespoons chopped fresh cilantro
1 (15 ounce) can black beans, rinsed and drained
½ cup chopped tomatoes
7 (8 inch) flour tortillas
2 cups shredded reduced-fat Cheddar cheese
1 cup salsa
½ cup sour cream

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a large bowl, mash pinto beans. Stir in 3/4 cup salsa and garlic.
