GRANDMA'S PINEAPPLE UPSIDE-DOWN CAKE

Grandma's Pineapple Upside-Down Cake image

My gramma used to bake cakes and pies during the Depression and my grampa would sell them door-to-door and on the street corners to support them during that awful time. This is one of my favorites.

⅔ cup white sugar
2 eggs
¼ cup pineapple juice

  • Alternate folding flour mixture and pineapple juice into the egg mixture in 3 batches, beginning and ending with the flour mixture. Pour over pineapple slices.

Tips:

  • Use fresh pineapple: Fresh pineapple gives the cake a more intense and juicy flavor. If you're using canned pineapple, be sure to drain it well and pat it dry before using.
  • Don't overmix the batter: Overmixing the batter can make the cake tough. Mix just until the ingredients are combined.
  • Bake the cake at the right temperature: The cake should be baked at 350°F (175°C) for about 45 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool completely before frosting it: This will help the frosting set properly.
  • Use a cream cheese frosting: Cream cheese frosting is a classic pairing for pineapple cake. It's tangy and sweet, and it complements the pineapple flavor perfectly.

Conclusion:

7-Up Pineapple Cake is a moist, flavorful, and refreshing cake that's perfect for any occasion. It's easy to make and can be enjoyed by people of all ages. With its bright yellow color and sweet pineapple flavor, this cake is sure to be a hit at your next party or gathering.
