A GREAT APPETISER - MUSHROOM SALT AND PEPPER!
From the TV show - Mirch Masala on Star Plus. This is am amazing appetiser that was on air this morning at 11:30am Oman time. With alot of improvements, Mirch Masala has made a comeback once again, and this time, it looks even more promising than before! I'm making this for lunch today, for mom and me:)

Steps:
- Heat oil in a wok.
- In the meantime, wash and drain the canned mushrooms.
- Remove the stem of each mushroom.
- Put into a large bowl.
- Add cornflour, maida, salt and a little water.
- Mix well.
- Put each mushroom, one at a time, into the hot oil and fry until light brown.
- Remove onto a clean paper napkin so as to drain out the excess oil.
- Prepare red chilli paste by heating a little garlic in a pan and then adding it to a little (depends on your taste) red chilli powder.
- Mix well and then add a little water to prepare the red chilli paste.
- Now, take 1 tsp.
- of this same hot oil in a pan.
- Add garlic and ginger.
- Stir-fry till the raw smell of the same is gone.
- Add green chillies, onion, the prepared red chilli paste, vinegar, soya sauce and the green portion of spring onion.
- Mix well.
- Add the fried mushrooms.
- Toss the mushrooms in the mixture until well mixed.
- Transfer into a serving bowl.
- Garnish with corriander leaves.
- Serve immediately.

A great appetizer, tasty. A nice blend of flavors You may make the mushroom fill ahead and freeze it. I usually split it into 4 bags so I can make only a dozen at a time. Thaw from frozen and continue to make the bread nappies.

Steps:
- Melt butter in a large fry pan and add the onions and mushrooms, Saute until soft.
- Add Mozzarella, parmesan, parsley, egg,salt& pepper, cook for 1 minute and remove from heat.
- Roll each crustless slice of bread to flatten it, butter each piece and cut each slice into 4 square pieces.
- Press bread pieces, the buttered side down, into a tiny muffin tins.
- Fill with mushroom mixture (about 1 1/2 tsp to each tartlet).
- Cut the 3 cheese slices into 16 pieces so you will have 48 pieces and put a piece on top of each tartlet.
- Bake in 350f oven for 20 to 25 minutes.
Tips:
- Choose the right mushrooms. The best mushrooms for this recipe are small, firm, and white or light brown in color. Avoid mushrooms that are slimy or bruised.
- Clean the mushrooms thoroughly. Wipe the mushrooms with a damp cloth or paper towel to remove any dirt or debris. Do not rinse the mushrooms under water, as this will make them soggy.
- Slice the mushrooms evenly. This will help them cook evenly. If the mushrooms are too thick, they will take longer to cook and may not get crispy.
- Use a hot skillet. This will help the mushrooms sear and get crispy. If the skillet is not hot enough, the mushrooms will release their moisture and become soggy.
- Don't overcrowd the skillet. If you overcrowd the skillet, the mushrooms will not cook evenly. Cook the mushrooms in batches if necessary.
- Season the mushrooms generously. Salt and pepper are the classic seasonings, but you can also add other seasonings, such as garlic powder, onion powder, or paprika.
