½ cup water
2 cups milk
2 (14.75 ounce) cans cream-style corn
1 (15.25 ounce) can whole kernel corn

4 slices thick cut bacon, cut into ½-inch (1 1/4 cm) strips
10 oz white onion, diced
kosher salt, to taste
4 cloves garlic, minced
1 pinch cayenne, optional
3 tablespoons all purpose flour
4 cups chicken stock
1 ¼ cups red potato, chopped
4 large ears fresh yellow corn kernels
1 cup red bell pepper, diced
¾ cup heavy cream
fresh chive, chopped, for garnish

Steps:

  • Turn the Instant Pot to sauté mode and set the time for 20 minutes. Add bacon to the pot and cook until crispy and the fat has rendered, stirring occasionally to prevent burning, 10-12 minutes.
