6 to 8 large baking potatoes
1/2 cup butter
4 to 6 ounces cream cheese, softened
1 bunch green onions, chopped
1/2 pound bacon strips, cooked and crumbled
2 cups (8 ounces) shredded cheddar or shredded Monterey Jack cheese
Pepper to taste
Additional shredded cheddar or Monterey Jack cheese

Steps:

  • Pierce potatoes with a fork; rub with oil if desired. Bake at 400° for 1 hour and 20 minutes or until tender. Let stand until cool enough to handle., Cut each potato in half lengthwise. 4 medium russet potatoes, about 6 ounces each
1 teaspoon vegetable oil
Kosher salt
1 tablespoon unsalted butter
2 leeks, (white and light green parts), halved lengthwise and thinly sliced
Freshly ground black pepper
2 cloves garlic, minced
2 teaspoons freshly chopped thyme
4 ounces 1/3-less fat chive-and-onion flavored cream cheese
1/2 cup skim milk
1 tablespoon chopped fresh parsley, plus extra for garnish

Steps:

  • Preheat the oven to 375 degrees F. Rub the potatoes with the oil and season generously with kosher salt. Place on a baking sheet and bake until the potatoes are very tender on the inside and crisp on the outside, about 1 hour, 15 minutes. Let stand 5 minutes.
