6 medium potatoes (about 2 pounds) , peeled and cut into chunks
1 carton (8 ounces) French onion dip
1 cup 4% cottage cheese
Salt and pepper to taste
1/2 to 1 cup shredded cheddar cheese

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain and mash potatoes. 1 cup shredded cheese
1/2 cup milk
4 tablespoons butter or 4 tablespoons margarine

5 pounds potatoes, peeled and cubed
1 cup sour cream
½ cup butter
½ cup grated Parmesan cheese
6 ounces cream cheese, softened
4 ounces extra-sharp Cheddar cheese, shredded
4 stalks green onions, chopped
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes.
  • While the potatoes are cooking, preheat the oven to 350 degrees F (175 degrees C).

1 1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 bunch scallions, finely chopped
3 tablespoons all purpose flour
3 cups whole milk
1/4 teaspoon freshly grated dried nutmeg
Generous pinch cayenne pepper

Steps:

  • Preheat the oven to 400°F. Lightly butter a 13 × 9 × 2 inch glass baking dish.
  • Mix the cheddar cheese and blue cheese in a small bowl. Arrange half of the sliced potatoes in the prepared baking dish, overlapping slightly. Sprinkle the potatoes with a teaspoon of the salt and 1/4 teaspoon of the black pepper.
