3/4 teaspoon kosher salt, divided

1 lb medium shrimp, shelled and deveined
1 -2 clove garlic, minced,according to taste
1/4 teaspoon crushed red pepper flakes
1/2 lb mesclun or 1/2 lb mixture greens
4 ounces feta cheese, crumbled

Steps:

  • In a medium bowl combine vinegar, cilantro, 1/2 tsp.
  • salt, and sugar.
  • Slowly whisk in the 2 Tblsp.
  • of oil.
  • Set this aside.
  • Heat the remainder 2 tsp.
  • oil in medium skillet over medium heat add the next 3 ingredients and remaining 1/3 tsp salt.

12 black peppercorns, coarsely crushed

Salt, to taste
2 pounds large shrimp, shelled and de-veined
4 cups shredded iceberg lettuce
3 cups grated carrots
2 cups diced celery
2 cups shredded red cabbage
5 scallions, minced
1 cup loosely packed cilantro leaves, minced (after measuring)
3 tablespoons fresh lime or lemon juice
2 tablespoons Asian sesame oil
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
3 dashes Asian hot chili oil, or to taste
Salt, to taste
Vegetable oil spray
3 tablespoons toasted sesame seeds, for garnish

Steps:

  • Make the paste: In a blender combine the first 9 ingredients and blend until pureed. In a bowl toss the shrimp with the paste and let marinate while prepping the vegetables.
  • Make the salad: In a large bowl combine the 6 salad vegetables. Make the dressing: In a bowl whisk together the 6 salad dressing vegetables. Spray a large skillet set over moderately high heat with some vegetable oil and heat until hot. Add the shrimp and cook, turning, for 3 to 4 minutes, or until just cooked. 1/4 cup olive oil
1 onion, chopped
3/4 lb tomatoes, chopped (2 medium-size tomatoes)
2 cloves garlic, crushed
1 small bay leaf
1/2 teaspoon dried basil
1 teaspoon dried oregano
1/4 cup chopped fresh parsley
1/2 teaspoon hot sesame oil (do not omit)
salt & freshly ground black pepper, to taste
1 lb uncooked cleaned and deveined shrimp
8 ounces feta cheese
8 black olives, halved (preferably Greek olives)
1/2 lemon
4 cups hot cooked rice

Steps:

  • Preheat oven to 475ºF.
  • Heat oil in a large skillet over medium-high heat.
  • Add onion and sauté until soft.
  • Stir in tomatoes, garlic, bay leaf, basil, oregano, parsley, hot sesame oil, salt and pepper.
  • Cook 4 to 5 minutes.
  • Remove vegetables from skillet with slotted spoon, leaving juices in skillet, and spread vegetables in bottom of an 8 x 8 x 2-inch baking pan.

1 1/2 large onions, coarsely chopped
1 lb tomatoes, seeded and chopped,reserving juice and seeds
3 -4 cloves garlic, crushed or chopped,more to taste
1 bay leaf
1 teaspoon dried basil, lightly crushed to release flavor
1 teaspoon dried oregano, lightly crushed to release flavor
1/2 cup chopped fresh parsley
1/2 teaspoon sesame oil
2 -3 dashes hot pepper oil (or Tabasco, distant second choice)
salt & freshly ground black pepper, to taste.
1/2 cup red wine or 1/2 cup white wine, as required for additional liquid
1 1/2 lbs large shrimp, peeled and deveined
8 ounces crumbled feta cheese, more to taste
15 -20 black kalamata olives, pitted and halved
1 lemon
hot cooked rice or rice, pilaf as accompaniment

Steps:

  • Preheat oven to 475 degrees F.
  • Heat olive oil in a large skillet over medium heat.

  • Remove from oven, and squeeze remaining lemon over top.
  • Serve with rice or rice pilaf.

1 cup long grain white rice
2/3 cup thinly sliced scallion
2/3 cup chopped Italian parsley or 2/3 cup summer savory
1 tablespoon finely chopped mint
1 medium cucumber, peeled and quartered length-wise, then sliced into chunks
4 ounces feta cheese, crumbled (or more to taste)
1 lb medium cooked shrimp (do not use small "salad shrimp")
1 (10 ounce) bag mixed salad greens or 1 (10 ounce) bag Baby Spinach
4 garlic cloves, grated on a microplane
1 tablespoon lemon pepper
1 dash salt (remember that the feta is salty)
1/2 cup extra virgin olive oil
1/2 cup freshly squeezed lime juice (about 2 limes)

Steps:

  • Mix vinaigrette and reserve.
  • Cook the rice in a very large pot of rapidly boiling salted water for 15-20 minutes, or until tender but slightly firm.
  • Drain and rinse in cool water, then drain well.
  • Combine rice and half of vinaigrette.
  • Let stand until rice is at room temperature.
  • Mix in the remaining vinaigrette and the scallions, parsley and mint, and chill for at least 4 hours.
  • Just before serving, line a serving platter/dish or individual plates with salad greens.
  • Place a mound of the rice mixture in the center, sprinkle with cucumber chunks, then the feta. Rim the salad with shrimp.
  • If you store the rice mixture and the rest of the ingredients separately, leftovers taste great. But if you mix everything together, the cucumber can become slimey and the feta can become watery overnight.

1 pound raw shrimp (26 to 30 count), peeled
Olive oil to taste
Salt and pepper to taste
Sugar to taste
2 medium tomatoes, cut into medium dice
½ cup crumbled feta cheese
½ cup pitted and coarsely chopped Kalamata or other black olives
1 teaspoon dried oregano
¼ cup olive oil
4 teaspoons red wine vinegar
1 (10 ounce) package factory-washed baby spinach leaves

Steps:

  • Thread shrimp onto metal skewers (or bamboo ones that have been soaked in water for 15 minutes). Brush both sides with oil and season with salt, pepper and a light sprinkling of sugar.
  • Heat gas grill, with all burners on high, until fully preheated, 10 to 15 minutes. Use a wire brush to clean grill rack, then brush lightly with oil. Close lid and allow to return to temperature. Grill shrimp until fully cooked and spotty brown, about 2 minutes per side.
  • Meanwhile, mix in a medium bowl the tomatoes, cheese, olives, oregano, 2 Tbs. of the olive oil and 2 tsps. of the vinegar. Unthread shrimp and add to bowl. Lightly toss ingredients to coat. Set aside. (Can be made an hour or so ahead.)
  • When ready to serve, drizzle remaining oil, as well as a generous sprinkling of salt and pepper, over spinach in a large bowl. Toss to coat. Add remaining 2 tsps. vinegar; toss again. Divide spinach among 4 large plates. Top with a portion of the shrimp mixture.

1 pound large shrimp
2 navel oranges
2 carrots, peeled and julienned
Juice from 1/2 lime
1 small jicama, peeled and julienned
1 tablespoon vegetable oil
1 to 2 teaspoons sriracha sauce
1 teaspoon fish sauce
Salt
1/8 teaspoon sugar
1/2 cup cilantro leaves, coarsely chopped
1 head Bibb lettuce, leaves washed and separated

Steps:

  • In a large, straight-sided skillet, bring 2 inches of water to a simmer. Add shrimp and cook until opaque throughout, 2 to 3 minutes. Drain and rinse under cold water.
  • Remove peel and pith from oranges and, working over a medium bowl, carefully cut between membranes, letting segments drop into bowl. Add carrots, lime juice, and jicama. Let sit for a few minutes. Mix in oil, sriracha, fish sauce, salt, and sugar. Adjust salt, sugar, and lime juice to taste. Stir in shrimp and cilantro. Serve on lettuce.

This is a favorite recipe handed down from my Oma, who used to make this for the deli. She used elbow macaroni. I have altered her methods to decrease prep time without sacrificing flavor.

1 (16 ounce) package elbow macaroni
1 tablespoon salt
3 tablespoons white vinegar
2 tablespoons white sugar
1 teaspoon dried dill weed
1 teaspoon dried parsley
½ cup olive oil mayonnaise (such as Hellman's®), or more as needed
½ lime, juiced
1 teaspoon salt, or to taste
2 stalks celery, diced
½ onion, diced
freshly ground black pepper to taste
2 (6 ounce) cans small shrimp, drained

Steps:

  • Bring 4 quarts of water to a boil. Add 1 tablespoon salt. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes.
  • Combine vinegar, sugar, dill, and parsley in a large bowl. Muddle the herbs with flat spatula and mix until sugar is dissolved. Whisk in mayonnaise, lime juice, and 1 teaspoon salt until creamy. Stir in celery and onion. Cover and refrigerate.
  • Rinse pasta under cold water. Fold pasta into the dressing until evenly coated. Cover and refrigerate, folding salad occasionally so that dressing is evenly absorbed, 8 hours to overnight. Add more mayonnaise if pasta looks dry.
  • Gently fold in shrimp in the last fold before serving.
