HARD TIMES CREAMED TUNA

Hard Times Creamed Tuna image

Times were tough for my newly divorced mom in the 70's. I remember eating creamed tuna on toast with a green salad on the side at least weekly. It was one of my favorite meals, and I had no idea we were eating it out of necessity. Times aren't so tough now, but I still make this about once a month. It's great when you're in a hurry, or have limited supplies on hand. My kids love it too!

AIMEE'S CREAMED TUNA LUNCHEON

Aimee's Creamed Tuna Luncheon image

I used to make this for my daughter and her little friends, when they would come over. It was very cold and they didn't want soup, they would ask me for something "fancy" for their luncheon. I used to make the little frozen puffed pastries and would serve the tuna in them! It turned out beautifully and they were overjoyed! Of course, I enjoyed it too. Let me clarify - she was 4 at the time, she wouldn't be caught dead eating it today - too many carbs!

Tips:

  • Choose high-quality canned tuna: Opt for tuna that is packed in water or olive oil and labeled "dolphin-safe."
  • Flake the tuna well: Use a fork to gently break up the tuna into small pieces. This will help it blend seamlessly into the sauce.
  • Use good-quality mayonnaise: Avoid low-fat or fat-free mayonnaise, as it will make the sauce thin and watery.
  • Add moisture to the sauce: If the sauce seems too thick, stir in a little milk or cream until you reach the desired consistency.
  • Season the sauce to taste: Don't be afraid to add more salt, pepper, or other seasonings to taste.
  • Serve the creamed tuna immediately: This dish is best when served fresh. However, it can be stored in the refrigerator for up to 3 days.
