1-1/2 teaspoons caraway seed
1 teaspoon dried oregano
1/2 teaspoon dried rosemary
1/2 teaspoon ground cumin
1/2 teaspoon turmeric
2 Tablespoons harissa (Moroccan paste)
2 cloves garlic, minced
2 teaspoons olive oil
4 Alaska Halibut steaks or fillets (6 to 8 oz. each), fresh, thawed or frozen

Steps:

  • Heat oven to 400 degrees F. Mix all dry ingredients in a small bowl. Stir in harissa, garlic and olive oil.
  • Rinse any ice glaze from frozen Alaska Halibut under cold water; pat dry with paper towel. Place halibut portions in spray-coated baking dish. Spoon and spread spice mixture over top of halibut. Cover dish with foil; seal. Roast 18 to 25 minutes for frozen halibut or 10 to 15 minutes for fresh/thawed fish. Cook just until fish is opaque throughout.

2 cups flour
3 tablespoons grated parmesan cheese
1 teaspoon salt
1/2 teaspoon garlic powder
2 tablespoons oil
3 eggs, beaten
1 3/4 cups flat beer or 1 3/4 cups water
vegetable oil (for frying)
1 1/2 lbs halibut, cut in 1-inch chunks
1 onion, cut in rings
2 carrots, peeled and sliced into 1/4-inch chunks
8 broccoli florets
1 green pepper, cut in rings

Steps:

  • Combine flour, parmesan cheese, salt and garlic powder. Mix together oil, eggs, and beer. Add moist mixture to dry ingredients. Heat oil in a deep fryer or deep pan to 350*. When oil is hot, dip halibut chunks in batter and deep fry until golden brown. Vegetables are battered and fried in same way. Ingredients should be dry, or dipped in flour for the batter to adhere firmly. Drain on paper and serve at once.

2 1/2 cups lukewarm water
1 tablespoon baking yeast
3 cups flour
1 1/2 cups active starter
1 cup warm water
1 cup flour
1 1/2 cups flour

  • Sprinkle yeast on water and allow to dissolve for 5 minutes. Gradually stir in flour, beating until smooth.
