1 ½ cups all-purpose flour
1 cup white sugar
4 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon vanilla extract
1 tablespoon cider vinegar
6 tablespoons vegetable oil
1 cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sift flour, sugar, salt, soda, and cocoa together into an 8x8 inch ungreased cake pan. Make three depressions. Pour oil into one well, vinegar into second, and vanilla into third well. Pour water over all, and stir well with fork.
  • Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until tooth pick inserted comes out clean. Frost with your favorite icing.

1 ½ cups white sugar
½ cup cocoa powder
2 teaspoons baking soda
½ teaspoon salt
⅔ cup vegetable oil
2 tablespoons cider vinegar
1 tablespoon vanilla extract
2 cups water
⅓ cup white sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir flour, 1 1/2 cups sugar, cocoa powder, baking soda, and salt together in a 8x12-inch baking pan. Make 3 wells in the mixture. Pour oil, vinegar, and vanilla extract each into their own well. Pour water into the pan. Stir batter with a fork until well combined.
  • Combine 1/3 cup sugar and cinnamon in a bowl. Sprinkle 3/4 of the mixture over the batter.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 30 to 40 minutes. Sprinkle the remaining cinnamon sugar over the hot cake. Let cool before slicing, at least 15 minutes.

I thought this recipe looked familiar when I first saw it and I was right. My Mom used to make this cake for every birthday celebrated in the house but she called it wacky cake. What makes it wacky? There are no eggs or dairy in it.

1 1/4 cups all-purpose flour
1/3 cup unsweetened cocoa
1 cup sugar
1/2 teaspoon salt
3/4 teaspoon baking soda
1 cup water
1/3 cup canola oil
1 teaspoon vanilla extract
1 teaspoon cider vinegar

Steps:

  • In an 8x8 inch square baking pan combine the flour, cocoa, sugar, salt and baking soda. Mix until it is completely light brown.
  • When it is mixed, make 4 dents in the mixture with a spoon, 2 large dents and 2 small dents.
  • Pour the water into one of the large dents.
  • Pour the oil into the other large dent.
  • Pour vanilla into one of the small dents.
  • Pour vinegar into the other small dent.
  • Stir until well moistened.
  • When batter is well mixed, smooth it out and spread into place with a spatula.

My sister sent me this recipe. Some years ago I had asked her if she still had the recipe for WACKY CAKE that she used to make when I was a little girl. She said that she didn't but then she came across this recipe that she had found in the local newspaper and because it was so similar, she decided to send it to me. This recipe was entered by Brenna Ekstand from Rosetown, Sask. into a recipe contest sponsored by Fry's Cocoa. She found it in her grandmother's handwritten collection.

3 cups all-purpose flour
2 cups sugar
1/2 cup cocoa
2 teaspoons baking soda
1 teaspoon salt
1/2 cup corn oil
