GREEN TEA LAYER CAKE

Green Tea Layer Cake image

This is a light and moist cake that is not too sweet and has a refreshing green tea fragrance. The frosting uses cream cheese but has enough sweetness to mask the sour taste. The matcha (green tea) powder gives it a delicate green hue too. This cake can also be baked as a sheet cake in a 9x 13 inch pan or as 2 separate round cakes in two 8-inch round pans. Adjust baking time accordingly.

Yield 12

Number Of Ingredients 16

1 cup all-purpose flour
1 cup cake flour
1 teaspoon baking soda
1 teaspoon salt
4 teaspoons powdered green tea
1 ¼ cups white sugar
1 cup vegetable oil
3 eggs
1 cup plain yogurt
1 ½ teaspoons vanilla extract
1 ¼ cups confectioners' sugar
2 teaspoons powdered green tea
2 tablespoons butter, softened
1 (3 ounce) package cream cheese, softened
½ teaspoon vanilla extract
1 ½ teaspoons milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 8-inch round pans. Sift together the all-purpose flour, cake flour, baking soda, salt, and green tea powder; set aside.
  • In a large bowl, beat together sugar, oil, and eggs until smooth. Stir in 1 1/2 teaspoons vanilla. Beat in the flour mixture alternately with the yogurt, mixing just until incorporated. Pour batter into prepared pans.
  • Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool on wire rack for 30 minutes before turning out of the pans.
  • To make Green Tea Frosting: Sift together confectioners' sugar and green tea powder. In a medium bowl, combine tea mixture with butter, cream cheese, vanilla and milk. Beat with an electric mixer until smooth.
  • To assemble the cakes: when the cakes are completely cooled, put one layer on a flat serving plate. Spread a thin layer of frosting over it. Place the other layer of cake on top, and spread frosting to cover the top and sides of cake. Dust with green tea powder if desired. Serve cold or at room temperature.

ALL PURPOSE GREEN TEA SAUCE

All Purpose Green Tea Sauce image

Found on islandteashop.com while I was searching for different ways to use the matcha (green tea powder) I just ordered for myself. The authors of the site suggest brushing it on pork loin or salmon before baking, using it as a dipping sauce for dumplings, or trying it as a salad dressing. I bet it would be great in other things, too. Easy and different, why not give it a try? :) Serving size depends on preference and what you decide to do with it; you'll want more for a dipping sauce, probably, than you would for a brushed-on glaze.

ALL-PURPOSE GREEN SAUCE

All-Purpose Green Sauce image

This tangy, creamy sauce is the perfect home for all those extra herbs you may have on hand from other recipes - that leftover sprig of mint, the stemmy part of that bunch of cilantro, the droopy basil. You can use any combination of soft herbs here; you'll need two packed cups altogether. And you don't have to limit yourself to herbs. Other flavorful, leafy options include arugula, celery leaves or pea shoots. For a vegan version, skip the yogurt and use more olive oil, along with a small squeeze of lemon for some acidity.

Time 10m

Yield About 2 cups

Number Of Ingredients 9

1 packed cup basil leaves
1/2 packed cup parsley leaves and tender stems
1/2 packed cup chopped chives
2 garlic cloves, peeled and smashed
Pinch of black pepper
1/4 cup plain Greek yogurt or sour cream
1/3 cup extra-virgin olive oil
1 1/2 teaspoons finely grated lemon zest
1/4 teaspoon kosher salt (Diamond Crystal), plus more to taste

Steps:

  • Place herbs, garlic and pepper in a food processor or blender, and pulse to combine, stopping to scrape down the sides of the container if necessary.
  • Add yogurt and purée until smooth. (This may take a minute or so; scrape down the sides of the container as needed.) With the motor running, gradually drizzle in the olive oil. Pulse in lemon zest and salt. Taste and add more salt if needed.
  • Use immediately or refrigerate in an airtight container for up to 5 days. Spoon over grilled or roasted chicken, seafood (especially shrimp and salmon), sausages, steaks, lamb chops and vegetables. Use as a marinade for chicken, lamb or pork; as a dressing for starchy salads with beans, potatoes or grains, or for hearty vegetable salads, like those with cucumbers or blanched and sliced sugar snap peas or green beans. Serve as a dip for crudité or chips. Spread in roast beef, lamb or pork sandwiches.

GOOD-ON-EVERYTHING GREEN SAUCE

Good-on-Everything Green Sauce image

Drizzle this bright, herby sauce over grilled fish, poultry, grain bowls or roasted vegetables. It also makes a tangy dip for crudités or poached shrimp. We like the combination of parsley and chives here, but feel free to use any soft herbs like basil, cilantro, dill or mint. Baby spinach is the key to giving this yogurt-based sauce a lovely green color, but you can also use baby arugula or kale.

Tips:

  • Choose high-quality green tea: The flavor of your sauce will depend on the quality of green tea you use, so be sure to choose a loose-leaf tea that is fresh and has a vibrant aroma.
  • Use the right amount of tea: Too much tea can make your sauce bitter, so be sure to measure it carefully. A good rule of thumb is to use 1 tablespoon of tea for every 1 cup of water.
  • Steep the tea for the right amount of time: The steeping time will also affect the flavor of your sauce. For a light and delicate flavor, steep the tea for 3-5 minutes. For a stronger flavor, steep the tea for 5-7 minutes.
  • Use a variety of ingredients: Feel free to experiment with different ingredients to create your own unique green tea sauce. Some popular additions include honey, ginger, garlic, lemon juice, and sesame oil.
  • Adjust the consistency: The consistency of your sauce will depend on your intended use. If you want a thin sauce, add more water or broth. If you want a thicker sauce, reduce the liquid by simmering it over medium heat.

Conclusion:

Green tea sauce is a versatile and delicious sauce that can be used in a variety of dishes. It is easy to make and can be customized to your own taste preferences. Whether you use it as a marinade, a dipping sauce, or a stir-fry sauce, green tea sauce is sure to add a unique and flavorful touch to your meals.
