1 egg

½ cup chopped celery
½ large bell pepper, chopped

2 tablespoons extra-virgin olive oil, 2 turns of the pan

1 cup beef stock, available on soup aisle in market in small paper boxes

Steps:

  • Preheat oven to 425 degrees F.
  • Place a large pot of water on to boil for spaghetti. When it boils, add salt and pasta and cook to al dente.
  • Mix beef and Worcestershire, egg, bread crumbs, cheese, garlic, salt and pepper. Roll meat into 1 1/2 inch medium-sized meatballs and place on nonstick cookie sheet or a cookie sheet greased with extra-virgin olive oil. Bake balls 10 to 12 minutes, until no longer pink.

1 large egg, beaten

5 cups Classic Tomato Basil Sauce, recipe follows
1 pound spaghetti
Fresh basil, for garnish
4 pounds ripe plum tomatoes or two 28-ounce can diced tomatoes in juice, such as Organic Muir Glen
2 heads garlic, cloves peeled and halved lengthwise
3/4 cup extra-virgin olive oil
1 1/2 teaspoons hot red pepper flakes

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.

Steps:

  • Combine the beef, pork, eggs, breadcrumbs, dried oregano, grated garlic, Pecorino Romano, 1/2 teaspoon of the salt and pepper to taste in a large bowl. Two 1 pound 8 -ounce cans of crushed, peeled tomatoes with their juice
2 tomato cans of water

2 tablespoons chopped fresh basil
2 heaping teaspoons salt
Sugar to taste
For the meatballs:
1 1/2 cups soft white bread cubes
1/3 cup milk
1 small egg
1 pound ground beef
1/2 cup grated Romano cheese
1/2 teaspoon finely minced garlic
1/4 cup finely minced parsley
Salt and pepper to taste
2 tablespoons olive oil
1 pound spaghetti
1 tablespoon butter

Steps:

  • Tomato sauce:
  • Heat oil in a casserole. Add garlic and stir until lightly golden. Then add the crushed tomatoes with their juice, 2 tomato cans of water, the ground pepper, chopped parsley, chopped fresh basil and salt. Then taste it. If it seems a little acidic, add a little sugar
  • Bring to a boil and simmer, stirring occasionally, for 45 minutes.
  • Meatballs:
  • In a bowl mix together the milk and egg. Add mixture to bowl of bread cubes. Toss to coat.

  • With wet hands form walnut size balls. Brown the meatballs lightly in olive oil. Add meatballs to 6 cups sauce bubbling in pot. Simmer 45 minutes.
  • Cook the spaghetti in boiling, salted water for the length of time specified on the box. Drain spaghetti by lifting it out of its cooking pot in a strainer/colander, pour the water out of the pot, transfer some cooked spaghetti from strainer/colander to pot in which it was cooked.
  • Ladle some sauce over pasta. Stir to coat. Add a knob of butter and toss again. Add meatballs and toss. Plate the pasta on 4 serving plates or pasta bowls. Add more sauce on top. Serve immediately with a block of Parmigiano-Reggiano and a cheese grater on the side.

4 sun-dried tomatoes, finely chopped
1 cup prepared marinara sauce
1/2 cup chopped fresh parsley leaves

Steps:

  • Preheat the oven to 450 degrees F. Brush a 9-by-13-inch baking dish with oil.
  • Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions for al dente. Strain, add back to the pot and toss with some oil.
  • Meanwhile, make the meatballs: Soak the bread with 2 tablespoons of the milk in a medium bowl, tossing occasionally, until completely soft, about 5 minutes. While the bread softens, combine the beef, pork, 1 of the eggs, 1/3 cup of the Parmesan, the minced garlic, 1 teaspoon salt and a few grinds of pepper in another medium bowl. Add the soaked bread to the meat mixture. Gently incorporate all the ingredients with your hands until well combined.
  • Brush a baking sheet with oil, and drop teaspoonfuls of the meatball mixture onto it. Brush your hands with a little oil, roll the mounds into balls and space them out evenly on the baking sheet. Bake until golden brown and almost completely cooked through, about 10 minutes.
  • Lower the oven temperature to 350 degrees F. Add the meatballs, mozzarella and sun-dried tomatoes to the cooked pasta, toss to combine and transfer to the prepared baking dish.
  • Whisk together the marinara sauce, the remaining 5 eggs, 2/3 cup Parmesan and 1/4 cup milk, the sliced garlic and 1 teaspoon salt in one of the empty bowls. Pour the sauce mixture over the spaghetti mixture, and press the spaghetti into a flat, even layer. Sprinkle the parsley over the top. Cover with foil, and bake until the casserole is hot and almost completely set, about 30 minutes. Remove the foil, and continue baking until the top of the casserole is set, about 10 minutes more. Let cool for a few minutes. Cut into squares, and serve warm.

2 tablespoons extra-virgin olive oil
2 celery ribs, chopped
2 medium yellow onions, chopped
1 large carrot, chopped

2 bay leaves
1 tablespoon tomato paste
One 28-ounce can chopped San Marzano tomatoes

Steps:

  • For the meatballs: In a large bowl, using your hands mix together the beef, pork, Parmesan, parsley, breadcrumbs, stock, salt, cayenne, eggs, garlic and onions until evenly combined. Be careful not to overwork the mixture; you don't want to compact the meat too much or the meatballs will be tough. Put a little oil on your hands and form loosely into golf ball size meatballs. You should have about 25.
  • Heat the olive oil in a large Dutch oven over medium heat. Gently add the meatballs and brown thoroughly on all sides; this will take about 15 minutes. Transfer the meatballs to a plate, and refrigerate until you are ready to cook them in the sugo.
  • For the gravy: In the same pan you used to cook the meatballs, heat the olive oil over medium heat and add the celery, onions and carrots. Cook, stirring occasionally, until soft, about 8 minutes. Add the garlic and bay leaves and cook until fragrant, 1 minute. Push the veggies to one side and add the tomato paste, toasting it on the bottom of the pan for 1 minute. Stir into the vegetables.
  • Add the tomatoes, chicken stock and thyme, and bring to a boil. Reduce the heat and simmer very gently, partially covered, until thick and significantly reduced, about an hour.
  • Carefully add the meatballs, a few at a time, and simmer, stirring very gently now and then - don't break-a-ya bawls! - until cooked through, 40 minutes. Discard the bay leaves and thyme sprigs. Add most of the basil and stir, reserving a little to sprinkle over the top for serving.
  • Meanwhile, cook the spaghetti in a pot of salted boiling water until al dente, about 8 minutes.
  • To serve, put the pasta into a large serving bowl. Immediately ladle sauce on top and then the meatballs. Garnish with chopped fresh basil and freshly grated Parmesan. Plate the remaining sauce and meatballs in a separate bowl.

Steps:

  • Preheat the oven to 425°F (220°C). Set a wire rack over a baking sheet and grease with nonstick spray.
  • Make the marinara sauce: Heat the olive oil in a large saucepan over medium heat. Add the onions and garlic and season with salt, pepper, and the red pepper flakes. Cook until soft and caramelized, about 15 minutes.
  • Set aside ⅓ cup (50 G) of the cooked onions and garlic for the meatballs and let cool.
  • Stir the tomato paste into the onions and cook until browned and aromatic, 3-5 minutes.

This recipe requires a full day of cooking but the effort is worth it. My mom got this recipe over 50 years ago from an Italian friend. The baking soda is the secret ingredient to making this recipe a success so don't eliminate it. When finished, it can almost be eaten with a fork. I quadruple the recipe so I have some to freeze.

1 (16 ounce) can tomatoes
1 (8 ounce) can tomato sauce
1 (6 ounce) can tomato paste
6 ounces water
1 teaspoon sugar
1 garlic clove, chopped
1 onion, chopped
1 teaspoon dried basil (don't substitute oregano as it is too strong for this sauce) or 1 tablespoon fresh basil, chopped (don't substitute oregano as it is too strong for this sauce)
1/4 cup parmesan cheese
olive oil
salt and pepper
baking soda
meatballs
1 lb ground chuck or 1 lb ground round
1 egg
1 slice bread, dipped in water, then squeezed
1 garlic clove, chopped
1 onion, chopped
1 teaspoon oregano
1/4 cup parmesan cheese

Steps:

  • Mix all meatball ingredients, roll in to balls and brown in skillet. Cool and refrigerate until 1 hour prior to serving. Olive oil may be needed to brown these if using very lean beef.
  • In the skillet, add chopped onions and cook until tender but not soft.
  • Add garlic and can of tomatoes. If using whole tomatoes, I mash them briefly in the skillet with a potato masher.
  • Cook until mixture comes to a boil.
  • Put in to a large dutch oven or sauce pan.
  • Add remaining ingredients except for baking soda, parmesan cheese, olive oil, salt and pepper.
  • Bring to a quick boil and immediately reduce the heat to medium low as this sauce will burn.
  • Add a pinch of baking soda, stir well and allow to simmer uncovered for 2 hours.
  • Taste the sauce for acidity. If acid level (or tang) is still high, add another pinch of baking soda and stir well. At this point do not taste the sauce as all you will taste is baking soda.
  • Cook two more hours.
  • Stir occasionally to prevent sticking. If needed, add a small amount of olive oil.
  • Eventually, you will start seeing the sauce getting darker around the edges of the pan. At this point you can season with salt and pepper and add the cooked meatballs.
  • Cook one additional hour.
  • One half hour prior to serving, stir in the parmesan cheese. This will thicken the sauce quickly.
  • This sauce is best served the next day.

1 tablespoon extra-virgin olive oil, or as needed

1 medium zucchini, roughly chopped

½ medium red bell pepper, roughly chopped
2 cloves garlic
½ medium yam, peeled and chopped
½ cup chopped carrots
2 pounds lean ground turkey
1 cup almond meal

½ teaspoon sea salt
freshly ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Cover two baking pans with aluminum foil.
  • Place squash, cut-sides up, on one prepared baking sheet. Brush the insides lightly with olive oil and season with salt and pepper. Let the oil soak in for about 2 minutes, then flip so cut-sides are down.
  • Cook in the preheated oven until tender when pierced with a fork, 45 to 60 minutes.
  • Meanwhile, prepare meatballs: Combine zucchini, onion, bell pepper, and garlic in a food processor. Pulse until finely chopped, and transfer to a large bowl.
  • Add yam and carrots to the food processor. Pulse until finely chopped, and add to the zucchini mixture.

1 onion, peeled and halved
28 oz crushed tomato, 1 can
½ cup unsalted butter
1 teaspoon salt
1 lb ground pork
1 lb ground beef
1 onion, finely chopped
2 cloves garlic, minced
1 cup shredded parmesan cheese
1 cup panko breadcrumbs
¾ cup fresh parsley, finely chopped
2 tablespoons worcestershire
1 egg
2 teaspoons salt

1 lb spaghetti

Steps:

  • Preheat the oven to 400˚F (200˚C).
  • Add the crushed tomatoes, butter, onion, and salt to a pot and bring to a simmer over medium heat.

3 slices crumbled white bread
2 lbs ground beef
1/2 cup chopped onion
1 crushed garlic clove
