1/4 pound thick cut bacon, diced
2 sourdough bread loaves (about 1 foot long)
1 pound pork butt or pork loin, cut in 1/2-inch pieces
1 pound smoked sausage, sliced 1/4-inch thick
1/2 pound andouille sausage, sliced 1/4-inch thick
2 cups chopped red onions
1 cup julienned red bell peppers
1 pound boneless chicken thighs, cut in 1/2-inch pieces
2 celery stalks, thinly sliced
1 tablespoon minced fresh garlic
1/4 cup chopped parsley leaves
1 cup chopped green onions
1 teaspoon salt
2 teaspoons freshly cracked black pepper
2 teaspoons cayenne pepper, or to taste
1/2 cup water
1 pound Havarti cheese, thinly sliced

Steps:

  • In a large cast iron pot, or heavy-bottomed braising pan add the bacon and fry until crisp. Remove from the pan and drain on a paper towel.
  • Preheat the oven to 200 degrees F. Cut the bread lengthwise and put in the oven.
  • Add the pork to the bacon grease, and cook on medium-high heat until the pork is 3/4 cooked. Next add the sausages, onions, and bell peppers and cook until the onions are translucent.
  • Add the chicken, celery, garlic, parsley, and 3/4 cup green onions. Cook until chicken is tender, then season with salt, pepper, and cayenne. Stir in the water and combine thoroughly. Cover and let sit for 15 minutes.
  • Evenly divide the meat mixture and cheese to each loaf. Top the cheese with the bacon and remaining green onions. Cut the loaves in half and serve.

24 oz sirloin steak, or top loin steak
kosher salt
fresh ground black pepper
¼ cup vegetable oil, plus 2 tablespoons, divided
2 tablespoons unsalted butter
½ large yellow onion, chopped
2 cups button mushroom, chopped
1 sourdough bread, large
6 slices cheddar cheese
1 cup fresh baby spinach
6 strips bacon, cooked
6 slices provolone cheese, or swiss cheese

Steps:

  • Season each steak generously with salt and pepper, making sure to rub the salt and pepper into the sides of the steak.
  • In a cast iron skillet, heat the vegetable over high heat until smoking hot. Lay the steaks in the pan and cook for about 2 minutes. Flip the steaks, then add the butter, swirling it around the pan. Using a large spoon, scoop the melted butter over the tops of the steak, basting them continuously. Cook for about 2 minutes to get medium rare. (Check the steaks with an instant read thermometer if you have one; you want an internal temperature of about 135˚F (55°C).) Set the steaks aside on a cutting board to rest.
  • Wipe out the skillet and heat the remaining 2 tablespoons of oil over medium-high heat. Add the onion and mushrooms and sauté, stirring constantly, until caramelized, about 20 minutes.
  • Using a serrated knife, slice the top off the bread and scoop out the insides to create a bread bowl. Nestle one steak into the bottom of the bread bowl. Layer the cheddar cheese evenly on top. Add the caramelized onions and mushrooms and use a spoon to spread them evenly over the cheese. Top with the spinach, then the bacon, then the Swiss cheese. Finally, put the second steak on top, tucking it under the lip of the bread bowl. Cover with the bread lid and wrap the entire loaf in foil.
  • Place the wrapped sandwich in the fridge and put a cutting board on top of it. Stack books on the cutting board to compress the sandwich. Chill in the fridge for at least 5 hours.
  • Preheat the oven to 250˚F (120°C). Remove the foil from the sandwich and place it on a baking sheet. Bake for 20 minutes, until the bread is slightly crisp.

3 tablespoons sour cream
1 tablespoon mayonnaise
1 tablespoon fresh basil, chopped
1/4 cup vegetable oil (for frying)
2 -3 fingerling potatoes, sliced thin (or use 1 large potato)
kosher salt, to taste
3 tablespoons butter
4 garlic cloves, minced
2 rolls (sub style)
2 slices swiss cheese (or your favorite)
1 small green bell pepper, sliced into strips
1 small sweet onion, sliced into strips
1/2 lb beef tips, kept thin (sliced as needed to keep them thin)
salt and black pepper, to taste
1 portabella mushroom, cap sliced

Steps:

  • SAUCE: Mix all sauce ingredients well, cover and set aside.
  • POTATOES: Heat oil in a skillet to 350°F Add sliced potatoes and fry, turning occasionally, until done (about 7-10 min). Drain potatoes on paper towels, and sprinkle lightly with salt.
  • ROLLS: To the pan with oil, reduce heat to medium and add the butter. When melted, add the garlic and cook 2-3 minutes until garlic is tender.
  • Place the cut side of the rolls face down into the garlic butter. Press gently to coat. Place rolls onto a baking sheet, butter side up. Broil in oven or toaster oven until nicely browned and toasted. Remove from broiler and set rolls onto plates. Add a slice of Swiss cheese to the bottom bun.
  • VEGETABLES: To the pan over medium-high heat, add the peppers and onions. Cover and let steam 2-3 minutes. Remove lid, stir, and continue cooking until onions are translucent and peppers done. Place vegetables in a dish and set aside.
  • MEAT: To the pan add a bit more olive oil and butter if necessary. (enough to sear steak). Add seasoned steak and let sear for 2-3 minutes. Toss and continue searing until almost desired doneness. Add mushrooms to pan and saute' for 2-3 minutes until mushrooms are browned and flavored with the meat juices. Drain meat and mushrooms onto a paper towel.
  • ASSEMBLY: To each bottom bun, add the meat, then vegetables, then potatoes. To the top bun, spread with sauce and place over top. Grab lots of napkins, a fork (to catch what falls on the plate), and enjoy.

8 ounces sliced fresh mushrooms
1 green bell pepper, seeded and cut into strips

10 slices provolone cheese
1 loaf French bread
1 (14 ounce) can beef broth
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
2 tablespoons Worcestershire sauce

¼ cup Pinot Noir or other dry red wine
½ cup prepared horseradish
½ cup brown mustard

Mix together the horseradish and mustard; spread onto the inside of the loaf. Place slices of provolone cheese on both sides of the loaf, then fill with the beef and vegetables. Close the loaf, and wrap the entire sandwich with aluminum foil.
  • Bake for 10 to 15 minutes in the preheated oven. For crunchier bread, you can bake it without the aluminum foil. Slice into servings, and serve with the juices from the slow cooker for dipping.
