Steps:

  • Preheat oven to 425 degrees F.
  • To make the frangipane, place the almonds and the sugar in a food processor and grind until sandy. Add the butter and continue mixing then add the egg, vanilla, and the flour and mix until smooth.

6 ounces cherries, pitted and cut in half
1 pound apricots, pitted and halved or quartered, depending on the size
30 grams (3 tablespoons) slivered almonds
1/2 teaspoon almond extract
3 tablespoons raw brown sugar
25 grams (1/4 cup) almond powder
1/4 teaspoon cinnamon
1 egg beaten with 1 teaspoon milk, for egg wash

Steps:

  • Remove the pastry from the freezer and place it on a baking sheet lined with parchment. Leave it to thaw while you prepare the fruit, but don't keep it out of the freezer for too long.
