Number Of Ingredients 15

1 to 2 tablespoons unsalted butter
2 Gala apples, peeled, cored, and each cut into 8 wedges
1 cup pure maple syrup, plus more for serving
1/4 cup canola oil
3 large eggs
2 cups heavy cream
1 teaspoon pure almond extract
1 teaspoon ground cinnamon
1 (1-pound) brioche Pullman loaf, crust removed, cut into 12 (1-inch cubes) or 4 (1-inch-thick) slices
2 tablespoons sliced almonds, toasted
1 cup almond paste
1/2 cup (1 stick) unsalted butter
2 large eggs
2 tablespoons all-purpose flour
Zest of 1/2 lemon

Steps:

  • Make the frangipane: In the bowl of an electric mixer fitted with the paddle attachment, mix together almond paste, butter, eggs, flour, and lemon zest until smooth. (Frangipane can be made 3 days ahead and stored in an airtight container, refrigerated, until ready to use. Let soften at room temperature before using.)
  • Make the apples: Heat butter in a medium skillet over medium high heat. Add apples and cook until golden brown on all sides, about 5 minutes. Remove apples from skillet and wipe skillet clean. Return apples to skillet and add maple syrup; cook until apples are soft. Keep warm until ready to serve.
  • Preheat broiler.
  • Heat butter in a large skillet over medium heat. In a large, shallow dish, whisk together eggs, heavy cream, almond extract, and cinnamon. Working in batches, dip brioche in egg mixture to coat. Transfer to skillet and cook, turning, until golden brown on each side, about 30 seconds per side. Transfer to a baking sheet. Repeat process with remaining bread and egg mixture. Let French toast cool slightly, about 5 minutes.
  • Lightly spread frangipane evenly over one side of each piece of French toast; transfer to broiler and broil until golden, about 30 seconds. Divide French toast evenly among four serving plates and top with apples and toasted almonds; serve immediately with additional maple syrup.

ALMOND-CRUSTED FRENCH TOAST

Yield 4 people

Number Of Ingredients 12

1/2 cup slivered almonds
4 tablespoons light brown sugar
8 large slices hearty white sandwich bread or good-quality challah (see note)
1 1/2cups whole milk , warmed (see note)
3large egg yolks
1/2 teaspoon ground cinnamon
2 tablespoons unsalted butter , melted, plus 2 tablespoons for cooking
1/4 teaspoon table salt
1 tablespoon vanilla extract
1 tablespoon Triple Sec
1 teaspoon grated orange zest
Maple syrup

Steps:

  • 1. Process ½ cup slivered almonds and 1 tablespoon light brown sugar in food processor until coarsely ground, 12 to 15 one-second pulses (you should have about ½ cup crumbs). 2. Adjust oven rack to middle position and heat oven to 300 degrees. Place bread on wire rack set in rimmed baking sheet. Bake bread until almost dry throughout (center should remain slightly moist), about 16 minutes, flipping slices halfway through cooking. Remove bread from rack and let cool 5 minutes. Return baking sheet with wire rack to oven and reduce temperature to 200 degrees. 3. Whisk milk, yolks, sugar, cinnamon, 2 tablespoons melted butter, salt, vanilla, Triple Sec, and orange zest in large bowl until well blended. Transfer mixture to 13- by 9-inch baking pan. 4. Soak bread in milk mixture until saturated but not falling apart, 20 seconds per side. Using firm slotted spatula, pick up bread slice and allow excess milk mixture to drip off; repeat with remaining slices. Place soaked bread on another baking sheet or platter. Sprinkle 1 tablespoon nut mixture over one side of each slice of soaked bread. 5. Heat ½ tablespoon butter in 12-inch skillet over medium-low heat. When foaming subsides, use slotted spatula to transfer 2 slices soaked bread to skillet, nut-mixture side down first, and cook until golden brown, 3 to 4 minutes. Flip and continue to cook until second side is golden brown, 3 to 4 minutes longer. (If toast is cooking too quickly, reduce temperature slightly.) Transfer to baking sheet in oven. Wipe out skillet with paper towels. Repeat cooking with remaining bread, 2 pieces at a time, adding ½ tablespoon of butter for each batch. Serve warm, passing maple syrup separately.

Tips:

  • Choose a thick, sturdy bread that can hold up to the custard and almond crust. Brioche, challah, or French bread are all good options.
  • For a richer flavor, use a mixture of milk and cream in the custard.
  • Add a teaspoon of vanilla extract or almond extract to the custard for extra flavor.
  • Be sure to soak the bread in the custard for at least 30 minutes, or up to overnight. This will help it cook evenly and prevent it from becoming dry.
  • When frying the French toast, use a non-stick skillet or griddle over medium heat. This will help prevent the almond crust from burning.
  • Serve the French toast immediately with your favorite toppings, such as maple syrup, powdered sugar, or fresh berries.

Conclusion:

Almond-crusted French toast is a delicious and easy-to-make breakfast or brunch dish. With its crispy almond crust and fluffy interior, it's sure to be a hit with everyone at the table. So next time you're looking for a special treat, give this recipe a try!
