2 cups coconut
1 cup chopped almonds, toasted if desired*
1 cup semisweet chocolate chips
2 teaspoons oil
48 whole almonds, toasted

Steps:

  • Heat oven to 350°F. Grease 15x10x1-inch baking pan. In large bowl, combine all brownie ingredients; beat 50 strokes with spoon. Spread batter in greased pan.
  • In medium bowl, combine cream cheese, sugar, flour and 2 eggs; beat until smooth. Stir in coconut and 1 cup chopped almonds. Drop spoonfuls of cream cheese mixture over brownie batter; spread evenly.
  • Bake at 350°F. for 30 to 40 minutes or until light golden brown and center is firm to the touch. Cool 45 minutes or until completely cooled.
  • In small saucepan, combine chocolate chips and oil. Heat over low heat until chocolate is melted, stirring constantly. Drizzle and spread over brownies. Cut into bars. Garnish each bar with 1 whole almond. Store in refrigerator.

Water, vegetable oil and egg called for on brownie mix box
1 1/2 cups flaked coconut
1/2 cup slivered almonds, toasted
1/8 teaspoon almond extract
2/3 cup (from 14-oz can) sweetened condensed milk (not evaporated)
1/4 cup semisweet chocolate chips

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom of 9-inch square pan with shortening or cooking spray. Make brownie batter as directed on box. Spread in pan. Bake 28 to 31 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean.
  • Meanwhile, in medium bowl, mix filling ingredients. Remove brownies from oven. Carefully spoon and spread filling evenly over brownies. Bake 15 to 18 minutes longer or until light golden brown. Cool completely on cooling rack, about 1 1/2 hours.

225g ground almonds
120g caster sugar
2 egg whites
20 blanched almonds (optional)
1 tbsp ground cinnamon
4 tbsp icing sugar

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Line a large baking sheet with baking parchment. Put the ground almonds and sugar in a large mixing bowl and mix to combine.
  • In a separate bowl, beat the egg whites until foamy, then add to the almond and sugar mixture. Stir well - it will form a slightly sticky mixture but should hold its shape.
  • Wet your hands lightly and roll a heaped teaspoon of the mixture into a ball between your palms - it should be about 4cm in diameter.
