1 pound dry black beans, rinsed and picked over
1 medium white onion, peeled and diced
6 cloves garlic, peeled and minced
6-8 cups vegetable stock (or water*)
2 cups (16 ounces) salsa verde, homemade or store-bought
1 (15-ounce) can fire-roasted diced tomatoes
1 (12-ounce) jar roasted red peppers, drained and diced
1 tablespoon ground cumin
2 teaspoons chipotle chili powder**
salt and pepper, to taste
toppings: diced avocado, chopped fresh cilantro, diced red onion, shredded cheese, sliced jalapeños or serranos

Steps:

  • Serve immediately, garnished with lots of your favorite toppings. Or transfer to sealed containers and refrigerate for up to 3 days, or freeze for up to 3 months.

  • Serve immediately, garnished with lots of your favorite toppings. Or transfer to sealed containers and refrigerate for up to 3 days, or freeze for up to 3 months.
  • Heat 1 tablespoon oil (extra ingredient for stovetop version) in a large stockpot over medium-high heat. Add onion and sauté for 5 minutes, stirring occasionally, until translucent. Add garlic and sauté for 1-2 more minutes, stirring occasionally, until fragrant.
  • Add in beans (pre-soaked overnight***) 6 cups stock, salsa verde, diced tomatoes, roasted red peppers, cumin, chili powder, and a pinch of salt and pepper. Stir to combine.
  • Continue cooking until the soup reaches a simmer. Then reduce heat to medium-low, cover, and cook for 45 minutes, or until the beans are completely tender, stirring occasionally.

2 tablespoons olive oil
1/3 cup dry quinoa
1 cup water
3 15-ounce cans black beans, drained (not rinsed)
2 28-ounce cans diced tomatoes, fire roasted if possible
4 tablespoons salted butter (replace with 2 tablespoons olive oil or refined coconut oil for vegan)
1 15-ounce can corn (or 1 1/2 cups frozen corn)

Tips:

  • Soaking the beans overnight: Soaking the beans overnight helps to reduce the cooking time and makes them more digestible. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them in water for 1 minute, then removing them from the heat and letting them soak for 1 hour.
  • Using canned beans: If you're short on time, you can use canned beans instead of dried beans. Just be sure to rinse and drain the beans before using them.
  • Sautéing the vegetables: Sautéing the vegetables before adding them to the chili helps to bring out their flavor and deepen the flavor of the chili.
  • Using a variety of spices: Chili is a great dish to experiment with different spices. Some common spices used in chili include chili powder, cumin, oregano, and paprika. You can also add other spices, such as cayenne pepper, chipotle powder, or smoked paprika, to taste.
  • Simmering the chili: Simmering the chili for at least 30 minutes allows the flavors to meld and develop. The longer you simmer the chili, the better it will taste.
  • Serving the chili: Chili can be served with a variety of toppings, such as shredded cheese, sour cream, diced avocado, or chopped cilantro. You can also serve it over rice, pasta, or cornbread.

Conclusion:

Almost Instant Black Bean Chili is a delicious and easy-to-make chili recipe that is perfect for a quick and easy weeknight meal.
