KFC COLESLAW BY REAL EMPLOYEE

KFC Coleslaw by Real Employee image

I worked for KFC for 3 years and coleslaw making was a near daily occurrence. This is the real recipe scaled down to table size. I see lot of recipes claiming to be the real thing but none are. This is the real thing. The sugar amount is not a typo. ***I updated the recipe because I left out the onion

KFC COLESLAW RECIPE

KFC Coleslaw Recipe image

This KFC Coleslaw Recipe is as close as you can get without actually ordering it from the restaurant directly. The taste is simply perfect!

Provided by Amy

Categories     Side Dish

Time 12h20m

Number Of Ingredients 11

8 cups finely chopped cabbage
1/4 cup finely chopped carrot
2 1/2 tablespoons very finely minced yellow onion
1/2 cup mayonnaise
1/3 cup granulated sugar
1/4 cup whole milk
1/4 cup buttermilk
2 1/2 tablespoons lemon juice
1 1/2 tablespoons apple cider vinegar
1/2 teaspoon salt
1/8 teaspoon ground pepper

Steps:

  • Chop the vegetables very fine: the cabbage, carrots, and onions are all chopped very fine, almost like the size of rice. You can chop them with a sharp knife, or if you have a food processor with a shredding attachment, use that and then finely chop with a sharp knife. (See note about using a pre-shredded coleslaw mix.)
  • In a large bowl, combine all the ingredients for the dressing. Whisk until smooth.
  • Add in cabbage, carrots, and onion; mix well until everything is thoroughly coated.
  • Cover and refrigerate overnight. (If you have time - and can remember! - stir it occasionally. This will give you the absolute best results.) Stir again before serving and enjoy!

ALMOST FAMOUS COLESLAW

Almost Famous Coleslaw image

Here's our take on the coleslaw served at KFC. It's sweet and cooling and a perfect pairing for salty fried chicken or any barbecue sandwich.

Provided by Food Network Kitchen

Categories     condiment

Time 20m

Yield 4 servings

Number Of Ingredients 8

One 14-ounce bag coleslaw mix (traditional mix of green cabbage and carrots)
1/2 small onion
2 tablespoons plus 2 teaspoons sugar
1/4 cup plus 2 tablespoons mayonnaise
2 teaspoons apple cider vinegar
1/8 teaspoon dry mustard powder
Pinch paprika
Kosher salt

Steps:

  • Working with half of the bag at a time, chop the coleslaw mix into 1/8-inch pieces (about the width of the carrots). Transfer to a large bowl. Dice enough of the onion into 1/8-inch pieces to yield 1/4 cup. Transfer to a fine-mesh strainer and rinse with cold water for 1 minute to soften the flavor. Gently wring out the onions in a paper towel and then stir into the coleslaw mix.
  • In a pint jar or other container with a tight-fitting lid, stir together the sugar and 3 tablespoons water until the sugar dissolves a bit. Add the mayonnaise, vinegar, mustard powder, paprika and 1/2 teaspoon salt, put on the lid and shake vigorously until completely combined. Stir the dressing into the coleslaw, then set aside for 10 minutes to marinate and soften, stirring a few times. Add more salt, if needed. The coleslaw will keep, covered in the refrigerator, for up to 1 day.

ALMOST KFC COLESLAW

When my dad was living, he loved KFC coleslaw and he swore that this was just like it or better. Never had it side by side to taste test it but this is a very good version of it.

Time 30m

Yield 10 serving(s)

Number Of Ingredients 10

1 head cabbage
1 cup baby carrots
1/4 cup onion
1/2 green bell pepper
1 1/2 cups Miracle Whip
1/4 cup sugar
milk, enough to make mixture creamy
salt, to taste
pepper, to taste
1/2-1 teaspoon celery seed, to desired taste

Steps:

  • Put cabbage, carrots and bell pepper through food processor. Or you can grate with a hand grater.
  • Grate onion to ensure you have exactly 1/4 c onion. Any more onion and it will ruin the whole batch.
  • Place in a large bowl.
  • In a medium bowl, mix together miracle whip, salt, pepper, celery seed, sugar and enough milk to make mixture creamy.
  • Pour over cabbage mixture.
  • Best if put in fridge to allow the ingredients to mix together.
  • NOTE: real mayo don't work as well with this recipe.

Tips:

  • For a creamier coleslaw, use mayonnaise instead of Miracle Whip.
  • Add a tablespoon of sugar to the dressing for a sweeter coleslaw.
  • If you like spicy food, add a teaspoon of cayenne pepper to the dressing.
  • For a more tangy coleslaw, add a tablespoon of vinegar to the dressing.
  • If you don't have time to chill the coleslaw before serving, you can serve it immediately.

Conclusion:

This Almost KFC Coleslaw is a delicious and easy-to-make side dish that is perfect for any occasion. It is creamy, tangy, and slightly sweet, with a hint of spice. The coleslaw can be made ahead of time and chilled, or it can be served immediately. No matter how you choose to serve it, this coleslaw is sure to be a hit with your family and friends.
