Stove Top Mac-N-Cheese by Alton Brown image

This is from Alton Brown's Good Eats show and it's an easy and good mac n cheese recipe to have on hand. You won't be buying the boxed stuff again after eating this. (edited 8/15/2008 - This was initially posted with 3/4 tsp of dry mustard but after making this a few times I agree with the reviewer that said this amount is too much so I've reduced it to 1/2 tsp.)

ALTON BROWN'S STOVETOP MAC AND CHEESE RECIPE - (4.3/5)

Alton Brown's Stovetop Mac and Cheese Recipe - (4.3/5) image

Provided by รก-54770

Number Of Ingredients 10

Ingredients:
1/2 pound elbow macaroni
4 tbsp. butter
2 eggs
6 oz. evaporated milk
1/8 tsp. ground cayenne pepper
1 tsp. kosher salt, plus more for boiling
freshly ground black pepper
1/4 tsp. stone ground mustard
10 oz. shredded sharp cheddar cheese (I only had medium in the house, so that's what I used)

Steps:

  • Bring a large pot of water to boil. Add a sprinkling of salt, then boil your noodles according to package directions. Once al dente, drain the pasta and return it to the pot. Add the butter and stir until butter has melted. Meanwhile, in a separate small bowl, whisk together the eggs, evaporated milk, cayenne, 1 tsp. salt, pepper and mustard. Once the noodles are cooked, drained and the butter has melted, stir the milk mixture into the noodles until incorporated. Add in the cheese and stir over low heat until cheese has melted, approximately 3 minutes. Serve immediately.

Tips:

  • Use freshly grated cheese. Pre-shredded cheese often contains additives that can prevent it from melting smoothly.
  • Use a variety of cheeses. This will give your mac and cheese a more complex flavor.
  • Don't overcook the pasta. It should be al dente, or slightly firm to the bite.
  • Make a roux. This will help to thicken the sauce and prevent it from becoming watery.
  • Use milk or cream. This will make the sauce creamy and rich.
  • Season the sauce to taste. Add salt, pepper, and other spices to taste.
  • Top with breadcrumbs or Parmesan cheese. This will add a crispy, flavorful topping.

Conclusion:

Alton Brown's stove-top mac and cheese is a delicious, easy-to-make dish. With a few simple tips, you can make the perfect mac and cheese every time. So next time you're looking for a comforting, cheesy meal, give this recipe a try.
