This recipe used to be on the box of American Beauty Lasagna noodles about 25 years ago. They have since changed their recipe but in my opinion this is the best version!

9 -11 cooked lasagna noodles
1 lb hamburger, browned
1 (1 1/4 ounce) package spaghetti sauce mix
2 (6 ounce) cans tomato paste
4 (6 ounce) cans water
24 ounces cottage cheese
1 lb shredded mozzarella cheese
1 tablespoon dried parsley

Steps:

  • Cook lasagna noodles as directed.
  • Brown hamburger.
  • Add spaghetti mix, tomato paste and water to the browned hamburger.
  • Mix well and simmer for 15 minutes.
  • While sauce is cooking, mix cottage cheese, mozzarella cheese and parsley together.
  • Layer sauce, noodles and cheese mixture in this order in a 9 x 13 baking dish. End with sauce on the top.
  • Sprinkle with parmesan cheese and place in a 350 oven.
  • Bake for 30 minutes.
  • Remove from oven and let stand for 10 minutes before serving.

This is an old family recipe. Don't tell your kids the secret ingredient, or they'll make oogy faces. This is a very moist rich cake with a lovely color, and the frosting is wonderful.

1 ¾ cups all-purpose flour
1 ½ cups white sugar
¾ cup unsweetened cocoa powder
2 teaspoons baking powder
½ teaspoon baking soda
1 ⅓ cups buttermilk
½ cup butter, softened
3 eggs
2 teaspoons vanilla extract
2 cups beets, peeled and shredded
1 cup milk
5 tablespoons all-purpose flour
1 cup white sugar
⅓ cup butter
½ cup shortening

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  • In a large bowl, mix 1 3/4 cup flour, 1 1/2 sugar, cocoa, baking powder and soda.
  • Whisk in buttermilk, 1/2 cup butter, eggs, and vanilla. Stir in shredded beets and pour batter into cake pan.
  • Bake at 350 degrees F (175 degrees C) for 45 minutes or until a toothpick inserted in the center of cake comes out clean.
  • For the frosting: Combine milk and 5 tablespoons flour in a small saucepan, heat to a boil. Stir constantly for 2 to 3 minutes. Stir in 1 cup sugar, 1/3 cup butter and shortening. Cool resulting mixture to room temperature and beat for 10 to 12 minutes until light and fluffy. Spread on cooled cake. This frosting is also excellent on spice or applesauce cake.
