This is a simple and delicious recipe. After making them the first time my husband said 'no more' to beef burgers. These are really good - any cooking method may be used, and they freeze very well. The recipe can also be used for meatballs or meat loaves.

3 pounds ground turkey
¼ cup seasoned bread crumbs
¼ cup finely diced onion
2 egg whites, lightly beaten
¼ cup chopped fresh parsley
1 clove garlic, peeled and minced
1 teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • In a large bowl, mix ground turkey, seasoned bread crumbs, onion, egg whites, parsley, garlic, salt, and pepper. Form into 12 patties.
  • Cook the patties in a medium skillet over medium heat, turning once, to an internal temperature of 180 degrees F (85 degrees C).

Extra-virgin olive oil, for coating the pan
1 onion, cut into 1/4-inch dice
Kosher salt
2 cloves garlic, smashed and finely chopped
1 1/2 pounds ground turkey
One 8-ounce can water chestnuts, coarsely chopped (not too fine--they add GREAT texture)
1/4 cup soy sauce, plus more if needed
1/2 bunch of fresh cilantro, leaves finely chopped
1-inch piece of fresh ginger, peeled and grated
2 tablespoons sambal oelek or Asian chili paste, optional (but recommended)
1/2 cup mayonnaise
2 teaspoons sambal oelek
4 burger buns (I like the seeded ones)
4 slices American of Cheddar cheese (American melts better)
4 slices beefsteak tomatoes
4 slices red onion
4 leaves butter lettuce

Steps:

  • For the turkey burgers: Coat a large saute pan with olive oil and toss in the onion. Season with salt and bring the pan to medium heat. Cook the onion until soft and very aromatic, 7 to 8 minutes. Add the garlic and cook for another 1 to 2 minutes. Turn off the heat and let cool.
  • In a large mixing bowl, combine the turkey, water chestnuts, soy sauce, cilantro, ginger, sambal if using and the cooked onions and garlic. (NOTE: Save the onion pan to cook the burgers in later!) Add 1/4 to 1/2 cup water to the mix--this will keep the burgers really moist! Use your hands to squish the mixture until everything is really well combined.
  • Make, cook and eat a little tester patty to be sure the turkey is really delicious. If the seasoning isn't just right, add a little more soy or a sprinkey-dink of salt. When you're confident the burger mix is perfectly seasoned, form it into 4 equal patties.
  • With a paper towel, wipe out the saute pan you used to cook the onion, coat the pan with fresh olive oil and bring it to medium-high heat. Add the burgers, being sure not to crowd the pan--if you need to work in batches, knock yourself out. Cook the burgers for 5 to 6 minutes on each side. The burgers should be browned and cooked through when done. (If working in batches, keep the first batch warm in the oven at 200 degrees F while cooking the second batch.)
  • For the toppings: Mix together the mayo and sambal oelek in a small bowl. Toast the burger buns and top with the burgers. Garnish as desired with the cheese, tomato, red onion, lettuce and spicy mayo.

1 clove garlic
Kosher salt
2 tablespoons balsamic vinegar, plus 1 teaspoon
2 teaspoons Worcestershire sauce
2 teaspoons hot sauce
14 ounces lean 93% ground turkey meat
6 ounces lean ground sirloin
2 tablespoons olive oil
1 large onion, thinly sliced
Freshly ground black pepper
4 whole-wheat buns or pita bread, toasted
Lettuce
Tomatoes
Mustard
Ketchup

Steps:

  • Preheat the oven to 375 degrees F.
  • Smash the garlic cloves, sprinkle with some salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Whisk the garlic with the balsamic, Worcestershire, and hot sauce in a small bowl.
  • Crumble the turkey and beef into a large mixing bowl. Pour the garlic mixture over the meat and form into 4 (5-ounce) burgers. Cover and set aside while you cook the onions.
  • Meanwhile, heat 1 tablespoon of the olive oil in a skillet over medium-high heat. Add the onion and cook, stirring occasionally, until browned but not mushy, about 15 minutes. Season the onions with the remaining teaspoon of balsamic and salt and pepper, to taste.
  • Heat a large nonstick skillet over medium-high heat for a minute. Brush 1 side of the burgers with the oil and season with salt and pepper, to taste. Cook seasoned side down until browned, about 2 minutes. Brush and season the top of the burgers, flip and cook until other side is brown, about 2 minutes more.
  • Transfer burgers to a baking dish and bake until an instant-read thermometer inserted sideways into the burgers registers 160 degrees F, about 5 minutes. Place the burgers on the buns or in pita and let rest for a few minutes. Serve with the caramelized onions and garnishes of your choice.

1 (16 ounce) package ground turkey
1/4 teaspoon onion powder
1/2 teaspoon garlic salt
1/4 teaspoon black pepper
1/4 cup barbecue sauce
4 slices American cheese
4 hamburger buns
pickles or mayonnaise, etc

Steps:

  • Mix Ground Turkey, onion powder, garlic salt and B.B.Q. sauce in large bowl.
  • Shape into 4 patties and and put in fridge covered for 1 hour. (this helps hold the patties together when grilling).
  • brush burgers with a little olive oil before placing on grill.
  • Place patties on grill or B.B.Q. over medium coals.
  • Grill 7 to 9 minutes on each side or until cooked medium well.
  • Top each patty with American slices & continue grilling until melted. Fill buns with the works and turkey burgers.
