QUICK AMISH FRIENDSHIP BREAD OR MUFFINS (NO STARTER REQUIRED)

Quick Amish Friendship Bread or Muffins (No Starter Required) image

I love this bread and I had a craving for it, but didn't want to wait the month it took for the starter to be ready, so, I modified it a bit. It might not be quite as tasty as the original, but it's great if you want it in a hurry! I like to use butterscotch pudding for a different, but really nice flavor! Hope you enjoy!

OATMEAL BRAN MUFFINS (AMISH FRIENDSHIP BREAD STARTER)

Oatmeal Bran Muffins (Amish Friendship Bread Starter) image

These are great low fat, healthy muffins that use Amish Friendship Bread Starter (yes, the gift that keeps on giving. . .I swear this stuff multiplies). Feel free to add nuts, raisins, cranberries, cinnamon, vanilla, etc. I make my starter with whole wheat flour, so I go ahead and use cake flour in this recipe to lighten it up a bit. I also use carrot baby food in place of the applesauce to healthify it a bit more :)

Time 45m

Yield 14 muffins, 14 serving(s)

Number Of Ingredients 10

3/4 cup amish starter
1 egg
1/2 cup buttermilk
1/2 cup applesauce (may sub pureed carrots or bananas)
1/2 cup natural bran
1/2 cup oats
1 teaspoon salt
1/4 cup splenda artificial sweetener
1 1/2 cups cake flour (may sub whole wheat flour but the muffins will be more tense)
1 teaspoon baking soda

Steps:

  • Beat together wet ingredients til just mixed.
  • Add remaining ingredients and stir until just mixed (batter should be a little lumpy).
  • Fill greased muffin tins 2/3 full and bake 30 minutes at 375 degrees.

Tips:

  • Use fresh ingredients: Fresh, high-quality ingredients will make a big difference in the flavor of your Amish Friendship Muffins. Look for ripe bananas, fresh apples, and pure vanilla extract.
  • Don't overmix the batter: Overmixing the batter can make the muffins tough. Mix just until the ingredients are combined.
  • Fill the muffin cups only 2/3 full: This will prevent the muffins from overflowing in the oven.
  • Bake the muffins at 350 degrees Fahrenheit for 20-25 minutes: Check the muffins for doneness by inserting a toothpick into the center. The toothpick should come out clean when the muffins are done.
  • Let the muffins cool before you eat them: This will help the muffins to set and makes them easier to handle.
  • Amish Friendship Muffins are a great way to use up leftover fruit: If you have any leftover apples, bananas, or berries, you can add them to the batter.

Conclusion:

Amish Friendship Muffins are a classic recipe that is easy to make and always a crowd-pleaser. These moist and flavorful muffins are perfect for breakfast, lunch, or a snack. With a few simple tips, you can make Amish Friendship Muffins that are sure to be a hit with your friends and family.
