This is very similar to a salad at a popular restaurant near my house. I loved it there and decided to make it at home. It's one of my favorite salads to make now!

2 skinless, boneless chicken breast halves
1 head red leaf lettuce, rinsed and torn
1 head green leaf lettuce, rinsed and torn
1 fresh tomato, chopped
1 bunch cilantro, chopped
1 (15.25 ounce) can whole kernel corn, drained
1 (15 ounce) can black beans, drained
1 (2.8 ounce) can French fried onions
½ cup Ranch dressing
½ cup barbeque sauce

Steps:

  • Preheat the grill for high heat.
  • Lightly oil the grill grate. Place chicken on the grill, and cook 6 minutes per side, or until juices run clear. Remove from heat, cool, and slice.
  • In a large bowl, mix the red leaf lettuce, green leaf lettuce, tomato, cilantro, corn, and black beans. Top with the grilled chicken slices and French fried onions.
  • In a small bowl, mix the Ranch dressing and barbeque sauce. Serve on the side as a dipping sauce, or toss with the salad to coat.

4 cups cooked chicken
1 (15 ounce) can pineapple chunks, well drained
1 cup celery, finely chopped
1/2 cup sliced black olives (optional)
2 green onions, chopped
1 cup green seedless grapes or 1 cup red seedless grapes
1 cup mayonnaise
1 tablespoon mustard
1 cup dry chow mein noodles
1 (11 ounce) can mandarin oranges, well drained
lettuce leaf

Steps:

  • In large bowl combine chicken, pineapple, celery, olives, onions and grapes.
  • Blend mayonnaise and msutard.
  • Toss gently with chicken mixture.
  • Cove and chill at least on hour.
  • Just before serving, gently fold in oranges and chow mein noodles.
  • Place on lettuce leaves placed on a platter.

2 skin-on, boneless chicken breasts
4 ounces horseradish-chive compound butter
1 yellow onion, cut into 5 whole slices
2 cups chicken stock
salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Using 2 fingers, loosen the skin on each chicken breast. Thinly slice compound butter and stuff under skin to cover as much of the chicken as possible.
  • Layer onion slices on the bottom of a glass baking dish. Pour in chicken stock. Place chicken breasts on top of the onions, skin-side up. Season with salt and pepper.
  • Bake in the preheated oven for 30 minutes. Start basting chicken with its juices and rotate if skin is not crisping evenly. Continue baking until chicken is no longer pink in the center and the juices run clear, about 25 more minutes, depending on the size of the chicken breasts. Baste chicken every 5 to 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
