ANGEL HAIR PASTA WITH SUN-DRIED TOMATOES & GOAT CHEESE
Absolutely delicious... and addictive. I've been known to eat all of mine, plus the portions set aside as leftovers. Thank God for gyms! **NOTE** Sun-dried tomato oil is the oil that comes in the jar of sun-dried tomatoes. Chicken broth can be substituted for the white wine, but in my opinion the wine works better with the other ingredients.

Tips:
- Use high-quality ingredients: The better the quality of your ingredients, the better your dish will taste. Look for fresh, flavorful vegetables, high-quality pasta, and creamy goat cheese.
- Don't overcook the pasta: Angel hair pasta cooks very quickly, so be careful not to overcook it. Cook it according to the package directions, or until it is al dente (still slightly firm to the bite).
- Use a flavorful oil: Olive oil is a classic choice for this dish, but you can also use other flavorful oils, such as avocado oil or walnut oil.
- Add the sun-dried tomatoes and goat cheese at the end: This will help to prevent the sun-dried tomatoes from becoming tough and the goat cheese from melting completely.
- Season the dish to taste: Add salt, pepper, and red pepper flakes to taste. You can also add a squeeze of lemon juice or a drizzle of balsamic vinegar for extra flavor.
Conclusion:
Angel hair pasta with sun-dried tomatoes and goat cheese is a quick and easy dish that is perfect for a weeknight meal. It is also a versatile dish that can be customized to your liking. For example, you can add other vegetables, such as spinach or zucchini, or you can use a different type of cheese, such as feta or Parmesan.
