1 large head cauliflower, broken into florets
2 cups chicken broth
2 tablespoons reduced-sodium chicken bouillon granules
2 cups half-and-half cream
2 cups 2% milk
1 medium carrot, shredded
2 bay leaves
1/4 teaspoon garlic powder
1/2 cup mashed potato flakes
2 cups shredded cheddar cheese

Steps:

  • In a large saucepan, combine the cauliflower, broth and bouillon. Bring to a boil. Reduce heat; cover and cook for 20 minutes or until tender. Mash cauliflower. , Transfer to a 3-qt. slow cooker. 4 thin slices bacon, cut into small bits
1 white onion, finely diced
1 head cauliflower, broken into small florets
1/2 teaspoon Cajun spice, or more to taste
Kosher salt and freshly ground black pepper
8 cups (2 quarts) low-sodium chicken broth
4 tablespoons (1/2 stick) butter
1/4 cup all-purpose flour
2 cups whole milk
1 cup half-and-half
3 cups grated Monterey Jack cheese, plus more for serving
1/4 cup sour cream
2 tablespoons minced fresh parsley, plus more for serving

Steps:

  • In a large pot, fry the bacon pieces over medium-high heat until crisp. Drain the bacon on a paper towel and set aside. Pour off the grease and return the pot to the stove.

2 tablespoons butter
32 ounces chicken broth
12 ounces cauliflower
6 ounces ham
1 cup cauliflower
1/2 cup yellow pepper
4 ounces cream cheese
4 ounces sour cream
1 cup cheddar cheese
1 cup muenster cheese
1 dash cayenne
1 tablespoon parsley
1/2 cup heavy cream
4 ounces sour cream
1 dash salt
1 dash pepper
1 cup monterey jack cheese

Steps:

  • Sautéed chopped onions in butter, until translucent and slightly browned. .
  • Add 32 oz chicken broth, bring to boil.
  • Add 12 oz frozen riced cauliflower, diced ham, peppers (any color), and fresh diced cauliflower.

1 tablespoon butter
4 -5 garlic cloves, minced
32 ounces chicken stock
4 cups water
2 (16 ounce) bags frozen cauliflower
1 small potato, peeled and cubed
1/2 cup heavy cream
1/2 cup fat-free half-and-half
1 cup white cheddar cheese, shredded
1/2 cup monterey jack pepper cheese, shredded
salt and pepper (I needed at least 1-2 tsp salt)
1 dash nutmeg

Steps:

  • Melt butter over medium. Saute garlic in butter over medium heat for 1 minute. Add cauliflower, stock, and water and bring to a boil over high heat. Boil for 5 minutes and add potatoes. Boil for another 20-25 minutes, or until all vegetables are very soft (fork goes right through them). Blend with immersion blender or blend in batches in blender. Add fat free half and half and heavy cream and stir. Add cheeses and lower to low heat, stir until melted. Add nutmeg, taste and season with salt and pepper.
