Apple-Almond Bake image

When my children were young, they loved this apple dessert-and they still do 45 years later! I like it served plain at room temperature, but it's hard to resist when served warm with a small scoop of vanilla ice cream. -Barbara Estabrook, Rhinelander, Wisconsin

APPLE & ALMOND CRUMBLE PIE

Apple & almond crumble pie image

Combine fruit pie with apple crumble to get the best of both - a warming dessert that slices neatly and delivers two textures of pastry

Provided by Barney Desmazery

Categories     Dessert

Time 1h30m

Number Of Ingredients 12

8 eating apples (Granny Smith or Braeburn work well)
50g golden caster sugar
½ tsp mixed spice
2 tbsp plain flour, plus extra for dusting
500g block shortcrust pastry
1 egg, beaten (optional)
clotted cream, custard or ice cream, to serve
50g plain flour
50g ground almonds
70g golden caster sugar
70g cold butter, cut into cubes
30g flaked almonds

Steps:

  • First, make the crumble. Tip the flour, ground almonds, sugar and a pinch of salt into a bowl, then rub in the butter with your fingers until the mix resembles breadcrumbs. Stir in the flaked almonds and chill until needed. Can be prepared up to two days ahead and chilled.
  • Heat the oven to 200C/180C fan/gas 6 with a baking tray inside. Peel, core quarter and slice the apples, then tip into a bowl with the sugar, mixed spice and flour. Toss well and set aside. Roll the pastry out on a lightly floured surface until it's large enough to line a 20-22cm pie dish. Line the dish with the pastry, then trim and crimp the edge. Alternatively, re-roll the pastry trimmings into an 80cm-long strip, then cut into three thin, long strips, and arrange into a 1cm-wide plait. Arrange the plait around the edge of the dish, and brush with some beaten egg.
  • Spoon the apples into the base, then scatter over the crumble. Bake on the hot tray for 35-40 mins until the topping is toasted and the pastry is deep golden. Leave to stand for 10 mins, then serve warm with cream, custard or ice cream.

TOASTED ALMOND AND QUINOA PILAF

Toasted Almond and Quinoa Pilaf image

From the LCBO's Food&Drink, Autumn 2011. This pilaf is surprisingly flavorful and makes for lovely presentation. It is easily made vegetarian by substituting vegetable stock. Though it is meant to be made with quinoa and almonds, I had millet and flax seed on hand, and it was still delicious. To use millet, add an extra 1/2 c of stock and give it an extra 5 minutes of both cooking and covered time.

Time 35m

Yield 1 pilaf, 4-6 serving(s)

Number Of Ingredients 12

1 3/4 cups chicken broth
1 cup quinoa, rinsed well and drained

Cover and reduce heat, simmering until most of the liquid has been absorbed, about 15 minutes (20 for millet). Remove from heat and let stand covered for 10 minutes (15 for millet). Fluff with fork and set aside.
  • In a large skillet, heat oil over medium-high heat. Add shallots and cook just until tender, about 3 minutes. Add garlic, salt, and pepper and cook until fragrant but not browned, about 1 minute. Tips:

  • Use the right type of rice. Long-grain rice, such as basmati or jasmine, is best for pilaf because it cooks up fluffy and separate.
  • Rinse the rice before cooking. This removes excess starch and helps the rice cook evenly.
  • Use a flavorful stock. Chicken or vegetable stock will add depth of flavor to the pilaf.
  • Sauté the rice in butter or oil before adding the stock. This helps the rice toast slightly and develop a nutty flavor.
  • Add your favorite vegetables, nuts, and fruits. Some popular additions to pilaf include carrots, celery, onions, peas, almonds, and dried cranberries.
  • Season the pilaf to taste. Salt, pepper, and garlic powder are all good options.
  • Fluff the pilaf with a fork before serving. This helps separate the grains and makes the pilaf light and fluffy.
