3 parsnips, peeled and cut into 1/2-inch slices
6 tablespoons olive oil, divided
1 large apple - peeled, cored, and cut into 1/2-inch slices
1 large pear - peeled, cored, and cut into 1/2-inch slices
2 large leeks, white parts only, halved lengthwise and thinly sliced crosswise
1 tablespoon balsamic vinegar
1 quart chicken stock
1 (2 inch) sprig fresh rosemary

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Toss parsnips with 2 tablespoons olive oil in a bowl; spread parsnips onto a baking sheet.
  • Bake in the preheated oven until slightly tender, 20 to 25 minutes. Reduce oven heat to 350 degrees F (175 degrees C).

1 tablespoon reduced-fat margarine
3 tart apples - peeled, cored, and chopped
3 pears - peeled, cored, and chopped
5 cups vegetable broth
½ teaspoon rubbed sage
¼ teaspoon ground black pepper
1 bay leaf
1 ½ teaspoons pureed fresh ginger
1 tablespoon chopped fresh parsley

Steps:

  • Melt the margarine in a large saucepan over medium heat. Cook and stir the apples and pears in the melted margarine for about 5 minutes.
