3 large tart apples (I used Granny Smith)
3 tablespoons unsalted butter
1/2 cup sugar
2 tablespoons lemon juice
2 tablespoons all-purpose flour
1/4 teaspoon cinnamon
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons unsalted butter, softened
3/4 cup light brown sugar
1 egg
1/2 cup sugar
2/3 cup plus 2 tablespoons all-purpose flour
1/8 teaspoon salt
6 tablespoons unsalted butter, cold, diced
1/4 cup chopped walnuts

Steps:

  • Peel and core the apples and cut into a 1/2-inch dice.
  • Melt the butter in a large sauté pan over medium heat. Add the apples and cook until they are soft, about 8 minutes.
  • Add the sugar, lemon juice, flour and cinnamon to the apples and stir to combine.
  • Cook until the mixture starts to bubble, then turn the heat to low and cook, stirring constantly, for 3 minutes.
  • Remove to a bowl to cool while you prepare the crust.
  • Line a 13×9-inch baking dish with foil or parchment paper and lightly spray with nonstick cooking spray.
  • In a bowl, whisk together the flour, baking powder and salt.
  • In a stand mixer, beat the butter and sugar together unit light and fluffy. Mix in the egg, then add in the flour mixture and mix just until combined.
  • Press the mixture evenly into the bottom of the prepared pan and up the sides 1/4-inch. Set the pan aside.
  • Preheat the oven to 350ºF.
  • In a stand mixer, mix together the sugar, flour and salt. Add the butter and continue to mix until the mixture is crumbly and pieces of butter are very small. You can also do this by hand with a pastry cutter.

1 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon grated lemon zest

1 cup 2 sticks unsalted butter, cold
1 large egg (lightly beaten)
5 cups apples peeled (cored and diced (see note below))
2 tablespoons freshly squeezed lemon juice
1/2 cup all-purpose flour
1 cup granulated sugar
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/8 teapsoon allspice
1/4 teaspoon ground nutmeg

Steps:

  • Preheat the oven to 375 degrees F. Butter the bottom and sides of a 9-by-13-inch glass or light-colored metal baking pan. Put a long piece of parchment paper in the bottom of the pan, letting the parchment extend up the two short sides of the pan and overhang slightly on both ends. (This will make it easy to remove the bars from the pan after they have baked.) Butter the parchment.
  • For the Crumble: In the bowl of a stand mixer fitted with the paddle attachment combine flour, sugar, baking powder, salt, lemon zest, and cinnamon on low speed. Add the butter, toss with a fork to coat with the flour mixture. Add egg and mix on medium-low speed until the texture resembles coarse cornmeal, with the butter pieces no larger than small peas. Pat half of dough into the prepared pan. Place reserved half aside. Place the pan and the remainder of the dough in the refrigerator while you prepare the filling.
  • For the Apple Filling: In medium bowl, gently toss diced apples and lemon juice together; set aside.
  • In a separate small bowl, whisk together the flour, sugar, salt, cinnamon, allspice and nutmeg. Pour over the apples and mix gently.

1 cup rolled oats
2/3 cup firmly packed dark brown sugar

1/2 cup apple butter
4 ounces dried apples
4 ounces dried cherries, golden raisins or other dried fruit

Steps:

  • For the base and streusel topping: Preheat the oven to 350 degrees F. Butter the bottom of an 8-inch-square baking pan.
  • Put the flour, oats, sugars, baking soda and salt in the bowl of a food processor fitted with a metal blade.
