1 -1 1/2 lb pork tenderloin
2 tablespoons cornstarch
1 teaspoon ground cinnamon
2 tablespoons brown sugar
2 apples, peeled,cored and sliced
2 tablespoons dried cranberries or 2 tablespoons raisins

  • Preheat oven to 400 degrees.
  • Place the tenderloin in a roasting pan or casserole dish (I use cooking spray first to make clean up easier).

1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
3 medium apples, peeled and sliced, divided
1/4 cup honey
1 small red onion, halved and sliced

1 teaspoon ground ginger, divided

1 tablespoon lemon juice

2 pounds boneless pork loin roast
4 red potatoes, peeled and sliced
salt and pepper to taste
3 sweet potatoes, peeled and sliced
2 tablespoons ground cinnamon
1 tart green apple - peeled, cored, and sliced
½ cup butter, sliced
½ cup milk
½ cup water
2 cubes chicken bouillon
1 cube beef bouillon
1 tablespoon cornstarch

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place the pork roast in a medium baking dish. Season red potatoes with salt and pepper, and arrange around the roast. 4 tablespoons butter
2 medium apples, peeled, cored and thinly sliced
1 large onion, chopped
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon cinnamon
1 teaspoon ground ginger
1 teaspoon paprika
1/2 teaspoon ground turmeric
1 teaspoon salt, or to taste
1 tablespoon freshly ground black pepper
1 boneless pork loin roast, 2 to 3 pounds
1 cup apple juice for basting, or more if needed.

  • Heat oven to 450. Put 2 tablespoons of the butter in a large skillet over medium heat. When it starts to foam, add the apples, onion and all the spices, along with some salt and pepper, and cook, stirring occasionally, until the apples and onion are soft, 10 to 15 minutes.
