Time 1h20m

Number Of Ingredients 8

4 or 5 medium fuji apples
12 oz fresh cranberries
1 1/2 tsp lemon juice
1 c sugar
1 1/3 c oatmeal
1 c walnut pieces
1 stick butter, melted
1/3 c brown sugar, firmly packed

Steps:

  • 1. Coat 2-quart baking dish with cooking spray
  • 2. Layer chopped apples and fresh cranberries in the casserole dish.
  • 3. Sprinkle fruit with lemon juice.
  • 4. Sprinkle sugar over the fruit and stir.
  • 5. In a separate bowl, combine oatmeal, nuts, melted butter, and brown sugar until just moistened.
  • 6. Sprinkle oat mixture on top of fruit mixture.
  • 7. Bake uncovered in 325 oven for 1 hour.

Tips:

  • Prep Ahead: Save time by washing and chopping the cranberries and apples the day before. You can also make the streusel topping in advance and store it in an airtight container in the refrigerator.
  • Choose the Right Apples: Use a variety of apples with different textures and flavors, such as Granny Smith, Honeycrisp, and Braeburn. This will give the casserole a more complex flavor and texture.
  • Don't Overcook the Apples: The apples should be tender but still hold their shape. Overcooked apples will become mushy and lose their flavor.
  • Use Fresh Cranberries: Fresh cranberries have a brighter flavor than frozen or dried cranberries. If you can't find fresh cranberries, you can use frozen cranberries, but thaw them before using.
  • Make the Streusel Topping Ahead of Time: The streusel topping can be made up to 2 days ahead of time. Store it in an airtight container at room temperature.

Conclusion:

This easy and delicious apple cranberry casserole is a perfect fall dessert. It's made with fresh apples, cranberries, and a sweet streusel topping. The casserole is easy to make and can be served warm or cold. It's also a great make-ahead dessert, so you can enjoy it all week long.
