APPLE WALNUT SALAD WITH CRANBERRY VINAIGRETTE
Steps:
- DIRECTIONS Preheat the oven to 350 degrees F (175 degrees C). Spread the walnuts out on a baking sheet in a single layer. Bake for 8 to 10 minutes in the preheated oven, or until lightly toasted. In a food processor, combine the cranberries, vinegar, onion, sugar, and mustard. Puree until smooth; gradually add oil, and season with salt and pepper. In a salad bowl, toss together the greens, apples, and enough of the cranberry mixture to coat. Sprinkle with walnuts, and serve.
Tips:
- Choose the Right Apples: Use crisp and tart apples like Granny Smith or Honeycrisp to provide a nice contrast to the sweet cranberries and walnuts.
- Fresh Cranberries: If you don't have fresh cranberries, you can use frozen ones. Just thaw them before using.
- Toast the Walnuts: Toasting the walnuts enhances their flavor and adds a nice crunchy texture to the salad.
- Make the Dressing in Advance: The dressing can be made ahead of time and stored in the refrigerator for up to a week. This will save you time when you're ready to assemble the salad.
- Serve Immediately: This salad is best served immediately after it's made. The apples and walnuts will start to soften if they sit for too long.
