3 lbs apples, peeled and sliced
3/4 cup packed brown sugar
3/4 cup whole grain flour
3/4 cup rolled oats
1/3 cup butter or 1/3 cup margarine, softened
1/2-1 teaspoon tea masala spices, to taste (substitute all spices or ras el hanout )

Steps:

  • Preheat oven to 375ºF/190°C.
  • Grease bottom and sides 10 inch square pan with butter or margarine.
  • Distribute apples in the mold.
  • In bowl combine remaining ingredients and mix well.
  • With your hands form crumbles. Sprinkle the crumbles over apples.
  • Bake about 30 minutes or until topping is golden brown and apples are tender.
  • Serve warm with ice cream or custard.
  • Note: You can reduce the amount of butter to ¼ of cup and add 2 tablespoons of light cream cheese.

140g porridge oats
25g ground almonds
1 tbsp sesame seed
1 tsp ground cinnamon
50g butter
1 heaped tsp honey
800g apples (I usually use eating apples), peeled, cored and roughly chopped
zest and juice 1 large orange
10 cardamom pods
1 tbsp brown sugar

Steps:

  • Heat oven to 180C/160C fan/gas 4. Put the oats, almonds, sesame seeds and cinnamon into a large mixing bowl. In a small pan melt the butter with the honey then stir into the oats until it looks like rough breadcrumbs - you might need to use your hands.
  • Put the apples, orange zest and juice and cardamom in a pan and cook for 10 mins until softened. Pick out the cardamom pods. Spoon into a baking dish, sprinkle with the sugar and scatter with the crumble mixture. Bake for about 40 mins until golden and crunchy. Serve with vanilla yogurt, ice cream or custard.

1 cup white sugar
¾ cup all-purpose flour
