Apple Cranberry Compote, recipe follows, for serving
1 cup fresh cranberries
1 cup granulated sugar
1 tablespoon honey
1/2 teaspoon kosher salt
6 Gala apples, skin on, cored and diced
1 stick cinnamon
1 lemon, juiced and zested

Steps:

  • Using a stand mixer fitted with the whisk attachment or a hand mixer, beat the eggs and granulated sugar until pale yellow, frothy and doubled in volume, about 10 minutes. Meanwhile, melt 3 tablespoons of the butter and cool to room temperature. In a separate bowl, mix the flour, baking powder and salt.
