- Pour the apple juice into a large slow cooker, and mix in the brown sugar and mustard, stirring until the brown sugar has dissolved. Mix in the contents of the spice packets, and lay the briskets into the apple juice mixture. Top with red potatoes, carrots, onions, and cabbage chunks. Push all ingredients into the liquid.
- Cover and cook on High until corned beef is very tender, 4 to 5 hours; or cook on Low for 8 to 10 hours. Slice meat thinly across the grain, and serve with vegetables.

Steps:
- Place whole pieces of corned beef in steam-jacketed kettle or stock pot; cover with water.
- Bring to a boil.
- Cover, reduce heat and simmer about 5 hours.
- Internal temperature of corned beef should read 180 to 200 degrees F.
- During cooking period, remove scum that rises to the surface.
- Remove cooked corned beef from juice and place in roasting pans (18 by 24-inches).
- Combine apple juice, soy sauce, Worcestershire sauce, vinegar, mustard and brown sugar.
- Pour equal amounts over meat in roasting pans.
- Place in 350F oven and bake 1 hour, basting every 15 minutes.
- NOTE: 1. After 3 hours cooking, test each piece of meat with a fork to determine the tenderness.
- 2. Because the grain of brisket runs in many directions, turn the piece of meat while carving to insure cutting across the grain.
GLAZED CORNED BEEF
This apricot sweet sauce really brings out the flavor in corned beef. It is great to serve the sauce over cooked carrots also!

Steps:
- Preheat oven to 300 degrees. Prepare a Dutch oven or a roasting pan with a lid by spraying with non-stick spray. If you don't have a pan with a lid heavy duty foil can be used.
- Rinse corned beef in cold water to remove some of the salty taste, and reserve pickling spice packet. Place corned beef in pan, and spread pickling spices on and around the roast.
- Add apple juice to the bottom of the pan until it comes up halfway up the side of the corned beef.
- Cover tightly with lid (or foil) and bake for 4 hours.
- Mix the ketchup and mustard together, remove corned beef from oven and carefully remove the lid. Spread ketchup mix on top, and return to the oven on broil for 10-15 minutes or until bubbly.
- Serve with mashed potatoes and steamed cabbage or carrots.
