1 tablespoon sugar
1 teaspoon ground cinnamon
3 cups all-purpose flour

2 1/2 teaspoons vanilla extract
4 eggs
1 cup walnuts, chopped (optional)

Steps:

  • Preheat oven to 350°F Lightly oil and flour the cake molds of a mini Bundt cake pan. In a medium sized mixing bowl, hand-mix the grated apples, 1 tablespoon sugar and cinnamon; set aside. In another bowl, sift the flour, baking powder and salt together; set aside.

Tips:

  • Ensure all ingredients are at room temperature before starting. This helps them combine more evenly and results in a smoother batter.
  • Creaming the butter and sugar together until light and fluffy is essential for creating a moist and tender crumb.
  • Be careful not to overmix the batter. Overmixing can result in a tough, dense cake.
  • Fill the mini bundt pans no more than 2/3 full. Overfilling can cause the cakes to overflow and bake unevenly.
  • Bake the cakes until a toothpick inserted into the center comes out with just a few moist crumbs attached.
  • Allow the cakes to cool in the pans for a few minutes before inverting them onto a wire rack to cool completely.
  • For a richer flavor, use brown sugar instead of granulated sugar.
  • Add a teaspoon of cinnamon or nutmeg to the batter for a warm and cozy flavor.
  • Top the cakes with a simple glaze made from powdered sugar and milk.
  • For a more festive presentation, decorate the cakes with sprinkles, chopped nuts, or fresh fruit.

These apple mini bundt cakes are a delicious and easy-to-make treat that is perfect for any occasion.
