8 tart apples (such as Macintosh)
4 Tbs (1/2 stick) butter
1/2 Cup plus 2 Tbs sugar
2 Tbs cornstarch
3/4 tsp cinnamon
1 tsp grated lemon zest
1 tsp vanilla extract

Steps:

  • Preheat oven to 350 degrees. Core, halve, and peel the apples. Cut into 1 inch chunks. Combine the apples and melted butter in a large bowl. Add the remaining ingredients and toss until the apples are evenly coated. Roll premade dough to form a 12 inch circle. Transfer it to a 10 inch pie plate and press it into the bottom and sides of the plate. Leave a 1 inch overhang. Fill the pie plate with the apple mixture, mounding it toward the middle. Brush the edge of the bottom crust with water. Roll second piece of premade dough to 12 inches, transfer on top of the apple mixture and crimp the edges together. Prick the top crust with a fork (I usually make a smiley face). Bake until the filling is bubbling and the top is golden, about 1 1/4 hours.
