1/2 cup butter, cubed
2 tablespoons light corn syrup
1 cup chopped pecans
12 slices Italian bread (1/2 inch thick)
2 large tart apples, peeled and thinly sliced
6 large eggs
1-1/2 cups milk
1-1/2 teaspoons ground cinnamon
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
CARAMEL SAUCE:
1/2 cup packed brown sugar
1/4 cup butter, cubed
1 tablespoon light corn syrup

Steps:

  • In a small saucepan, combine the brown sugar, butter and corn syrup; cook and stir over medium heat until thickened. Pour into a greased 13x9-in. baking dish; top with half of the pecans, a single layer of bread and remaining pecans. 1/2 cup almond milk
1 tsp vanilla
1/2 tsp cinnamon
Butter, (or non-stick spray, for the skillet)
12 slices of thick Texas style bread
Apple Cinnamon Filling
1/3 cup pecans, (chopped)
Powdered sugar, (optional)

Steps:

  • In a medium mixing bowl, whisk eggs, milk, vanilla and cinnamon together.
  • In a large skillet, spray with non-stick spray or melt butter over medium/low heat.
  • Dip one piece of bread at a time into the egg mixture and then add it to the skillet.

2 slices of thick bread (like Texas toast)
1/4 of an apple, cored, and sliced into 1/4" slices
3 strips thick cut bacon
1 tablespoon light brown sugar
3 tablespoons pecans, crumbled into small pieces
2 ounces mascarpone (or cream cheese)
1 large egg
1 tablespoon milk

Steps:

  • Preheat toaster oven to 400°F.
  • Place bacon and apple slices on a foil-lined baking sheet and sprinkle both with brown sugar and bake for 15 minutes.
  • Then add pecans, making sure they get into some of that rich bacon fat in the pan, and bake for another 3 minutes.
  • Remove from oven and roughly chop the bacon into smaller pieces.
  • Assemble the stuffed french toast. First, spread a layer of mascarpone (or cream cheese) on both slices of bread. Then, layer remaining ingredients (apple slices, bacon, and pecans), and add the second slice of bread on top, like a sandwich.
  • Preheat a pan on the stove to medium heat.

8 slices Pepperidge Farm 80 calorie cinnamon swirl bread
2/3 cup 1% milk
2 large eggs
1/8 teaspoon salt

  • 1. In a medium microwave-safe bowl, combine apples, 4 tablespoons water, 1 teaspoon Truvia® natural sweetener, and cinnamon. Cover and cook until apples are tender and juicy, about 6 minutes. Uncover, toss and set aside.

  • Preheat oven to 350 degrees F.
  • In a flat dish, crack eggs and add milk, vanilla extract and cinnamon. Whisk until well combined then lay challah slices in mixture to coat and absorb it all, turning occasionally.
  • Set a 10-inch skillet, seasoned cast iron if you have, over medium heat. Add the butter and 1 cup sugar and cook, stirring constantly, until the sugar has melted and caramelized, about 8 minutes. Sprinkle the top with some brown sugar and place into the preheated oven. Bake in the middle of the oven for 40 to 45 minutes until the top is golden and puffy.
  • When done, allow to cool for 2 to 3 minutes then invert onto a large plate. Dust with confectioners' sugar, if desired, and serve.

4 Granny Smith apple - peeled, cored and sliced
