Roast Pork Loin with Apples image

Feed a crowd with Food Network Kitchen's Roast Pork Loin with Apples recipe. The flavor comes from apple cider, apple cider vinegar and fresh apples.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h20m

Yield 4 servings

Number Of Ingredients 14

2 tablespoons vegetable oil
1 (2-pound) boneless center cut pork loin, trimmed and tied
Kosher salt and freshly ground black pepper
1 medium onion, thickly sliced
2 carrots, thickly sliced
2 stalks celery, thickly, sliced
3 cloves garlic, smashed
3 sprigs fresh thyme
3 sprigs fresh rosemary
4 tablespoons cold unsalted butter
2 apples, such as Cortland or Rome peeled, cored and cut into 8 slices
2 tablespoons apple cider vinegar
1 cup apple cider
2 tablespoons whole grain mustard

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large ovenproof skillet heat the vegetable oil over high heat. Season the pork loin all over generously with salt and pepper. Sear the meat until golden brown on all sides, about 2 to 3 minutes per side. Transfer the meat to a plate and set it aside.
  • Add the onion, carrot, celery, garlic, herb sprigs, and 2 tablespoons of the butter to the skillet. Stir until the vegetables are browned, about 8 minutes. Stir in the sliced apples, then push the mixture to the sides and set the pork loin in the middle of the skillet along with any collected juices on the plate. Transfer the skillet to the oven and roast the loin until an instant-read thermometer inserted into the center of the meat registers 140 to 150 degrees F, about 30 to 35 minutes. (See Cook's Note.)
  • Transfer the pork a cutting board and cover it loosely with foil while you make the sauce. Arrange the apples and vegetables on a serving platter and set aside. Remove and discard the herb sprigs. Return the skillet to a high heat and add the vinegar scraping the bottom with a wooden spoon to loosen up any browned bits. Reduce by half then add the cider and reduce by about half again. Pull the skillet from the heat and whisk in the mustard, and the remaining 2 tablespoons of cold butter. Adjust the seasoning with salt and pepper, to taste.
  • Remove the strings from the roast and slice into 1/2-inch thick pieces and arrange over the apple mixture. Drizzle some sauce over meat and serve the rest on the side.
  • Cook's Note: Pork cooked this way will be slightly pink. If desired, cook the pork to 160 degrees F, but be aware that this lean cut will not be as moist at the higher temperature.

Provided by Janette

Categories     Dinner Ideas

Time 1h15m

Number Of Ingredients 13

2 cups (about 2) apples, cored, peeled and grated
2 pounds (907 grams) ground pork
3/4 cup (200 grams) yellow onion, finely chopped
1/2 teaspoon dried oregano
1/4 cup (small handful) fresh sage leaves, chopped
1 large egg, lightly beaten
2/3 cup (38 grams) breadcrumbs
1/2 cup (118 ml) milk
1 teaspoon salt
1/4 teaspoon freshly ground black pepper

2 cups (472 ml) beef stock/broth
Cornstarch or flour

Steps:

  • Preheat oven to 400°F/200°C.
  • Wrap the grated apples in a clean towel and squeeze out as much moisture as you can. THIS IS AN IMPORTANT STEP SO YOU DON'T GET SOGGY MEATLOAF.
  • To a large bowl add the ground pork, apples, onion, oregano, sage, egg, breadcrumbs, milk, salt and pepper. Mix until everything is well combined.
  • Add the meat mix to a 9 x 13. inch (23 x 33 cm) casserole dish and mold into a meatloaf shape, 10 inches long and 5 inches wideT (25 x 13 cm). Top with ketchup and pour beef broth to the bottom of the pan.
  • Cover with foil and bake for 30 minutes. Remove the foil and contine to bake for 30 more minutes, or until a thermometer when inserted into the center reaches 165°F/74°F.
  • Remove from the oven and allow to rest for 10 minutes before slicing and serving.
  • To make the gravy using cornstarch, strain through a sieve and add to a saucepan. Mix a little cornstarch with water and stir into the gravy, simmer until thickened. Using flour, mix a little flour in a bowl with a little of the warm gravy, pour into the pan and whisk bringing to a simmer until thickened.

Additional Cooking Suggestions and a Comprehensive Summary of the Dish

Culinary Techniques and Flavorful Enhancements

  • Maximize Flavor Infusion: Enhance the dish's taste by marinating the boneless hog loin in apple cider, brown sugar, and aromatic herbs like sage, thyme, and rosemary. This infusion adds depth of taste and enriches the meat's natural flavors.
  • Crispy Outer Crust: Achieve a perfectly golden-crisp outside crust by searing the loin roast in a hot skillet, caramelizing the sugars and sealing in the juices. This technique ensures a delightful textural contrast between the crispy surface and the succulent interior.
  • Savory and Aromatic Stuffing: Create a flavorful stuffing by combining sautéed apples, onions, and celery, along with seasoned bread crumbs, herbs, and spices. This mixture complements the richness of the roasted meat and adds a comforting, home-cooked touch to the dish.
  • Heightened Flavors with Apple Cider Glaze: Elevate the dish to new heights of taste by crafting an apple cider glaze. Reduce apple cider, brown sugar, and spices to a thick, syrupy glaze and baste the roasting meat periodically. This glaze adds a luscious sheen, enhances the flavors, and provides a delightful tang.
  • Garnish for Presentation: When plating, impress your guests with a garnish of fresh herbs like parsley or chives. This touch of color and aroma adds visual appeal and enhances the dish's overall presentation.

Savoring the Culinary Symphony

The Apple Pork Loaf symphony unfolds in a harmonious crescendo of flavors and textures. The succulent, juicy meat, infused with the sweetness of apples and spices, blends seamlessly with the aromatic stuffing, creating a delightful medley in every succulent morsel.

The crispy, caramelised crust adds a delightful crunch to the succulent interior, while the aromatic apple cider glaze provides a perfect balance of sweet and tangy flavors. Each element of this culinary masterpiece contributes to an unforgettable gastronomic experience.

Serve this delectable dish with roasted or mashed root winter flavours harmonious on the table, leaving your guests in culinary bliss.
