APPLE-RAISIN COLE SLAW WITH SOUR CREAM DRESSING
I usually use vinaigrette dressings on my cole slaws, but I needed one that was more conventional and less pickle-y to take to an office pot-luck. This one has a more familiar creamy dressing and nice sweet and tangy flavors.

Steps:
- Combine the mayonnaise, sour cream, brown sugar, and vinegar. Whip with a fork and set aside while you prepare the salad.
- Shred or finely slice the cabbage.
- I used 1 sweet-tart Jonagold and 1 sour Granny Smith apple, but you can use any variety you like. Core and chop (I did not peel them).
- Peel and coarsely grate the carrots.
- I used half golden and half black raisins. I think dried cranberries would be even better. You can use more than 1 cup if you like.
- Toss cabbage and fruits in a large bowl. Dress and toss again to coat everything in mayonnaise-sour cream mixture. Allow to marinate in the refrigerator for a few hours.
- Garnish with nuts just before serving. (The nuts will get soggy if you add them at the same time as everything else.)
Tips:
- Use a sharp knife or mandoline to thinly slice the cabbage and carrots for a more uniform slaw.
- If you don't have a mandoline, you can use a food processor fitted with a slicing blade.
- Be sure to rinse the cabbage and carrots well before slicing to remove any dirt or debris.
- You can add other ingredients to your coleslaw, such as shredded broccoli, cauliflower, or bell pepper.
- For a sweeter coleslaw, add some chopped apples or raisins.
- For a more tangy coleslaw, add some lemon juice or vinegar.
- Be sure to chill the coleslaw for at least 30 minutes before serving to allow the flavors to meld.
Conclusion:
Apple raisin coleslaw with sour cream dressing is a delicious and refreshing side dish that is perfect for potlucks, picnics, or summer cookouts. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a side dish that is both healthy and delicious, give this apple raisin coleslaw a try.
