1/4 c cream sherry
1/4 c dried or fresh black currants
1 1/2 c cranberries, fresh
1 c sugar
6 Tbsp flour + 1 cup
1 Tbsp orange zest, grated
3/4 tsp allspice, ground
1/8 tsp nutmeg, ground
1/4 tsp salt
6 c granny smith apples (sliced thin)
1/4 c sour cream
1 pastry for a single-crust pie (10 inch)
2/3 c brown sugar, firmly packed
1 stick unsalted butter, cracked

Steps:

  • 1. Combine the sherry and the currants in a small bowl. Let sit for at least an hour, until currants are nice and plump.
  • 2. Preheat oven to 375°. In a large bowl mix 1 cup white sugar with 6 Tbsp flour, orange zest, allspice, nutmeg, and salt. Move currants from sherry with slotted spoon (set sherry aside) to the sugar mixture. Add cranberries and apples, sour cream, and mix well. Pour filling into unbaked pie pastry and drizzle with the reserved sherry.

Filling:
6-8 tart apples
1 egg, slightly beaten
1 1/4 cups sour cream
3/4 cups sugar
1/2 teasppon salt
2 teaspoons vanilla
1/4 cup flour
Topping:
1/3 cup brown sugar
1/3 cup white suagr
1 teaspoon cinnamon
1/2 cup flour
1 cup coarsely chopped walnuts
5 tablesoons melted butter
pinch of salt

Steps:

  • Crust: Sift flour, sugar, salt and cinamon in bowl. Cut in butter. Add enough apple cider or Calvados to hold dough together. Form into a ball. Flatten slightly and roll on lightly floured surface. Put into a 9" deep pie pan. Filling: Pare and thinly slice aples. Mix eggs, sour cream, sugar, salt, flour and vanilla. Add to apples and toss to coat. Lightly spoon into crust. Bake 10 minutes at 450 degrees. Reduce to 350 degrees and bake an additional 40-45 minutes. Topping: Mix sugar, cinnamon, flour, salt, and nuts. Add melted butter and mix well. After pie has been in oven for 35 minutes, spread topping over pie and continue to bake until golden brown.
