- In a large bowl, combine the first 12 ingredients. Crumble beef and sausage over mixture and mix well. Shape into 1-in. balls., Place meatballs on greased racks in shallow baking pans. Bake, uncovered, at 375° for 15-20 minutes or until no longer pink. Drain on paper towels., Meanwhile, in a Dutch oven, combine the sauce ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes., Gently stir in 6 dozen cooked meatballs and heat through. Save the remaining meatballs for Hungarian Pepper Soup with Romano Crisps or save for another use.

This one's from Better Homes and Gardens. Delicious spicy and a little sweet Chinese influence and flavor. Took these to a Memorial Day's party and had no leftovers.

- In large bowl, whisk together egg and milk. Tear bread slices into bite sized pieces and add to bowl. Stir to coat and let sit 10 minutes. Add ground chuck, garlic, pepper, salt, and cayenne. Make meatballs (I came out with 28).
- Place on a cookie sheet sprayed with cooking spray. Cook at 325 F for about 10 minutes. Turn once. Cook an additional 10 minutes. Drain.
- Combine every other ingredient except green onions. Add to a pan and cook until thickened stirring constantly. Pour over meatballs. Add chopped green onions.
- The original recipe called for frying the meatballs, but I like baking them instead and draining off the grease. Use whichever method you prefer.

- For the meatballs: Combine the ground beef, pork, breadcrumbs, Parmesan, ricotta, parsley, crushed red pepper, salt, garlic, eggs, milk and black pepper in a bowl. Mash with your hands until thoroughly combined. Form into small balls and place on a baking sheet. Set in the fridge for 1 hour.
- Heat the oil in a large skillet over medium-high heat. Brown the meatballs in batches until nice and deep golden, then move them to a plate.
- For the sauce: Into the same skillet, add the garlic and onions and cook for 2 to 3 minutes. Add the tomato sauce, parsley, tomato paste, sugar, salt, crushed red pepper and black pepper. Reduce the heat to medium low and cook for 15 to 20 minutes.
- Add the meatballs back to the skillet and simmer another 15 minutes. Keep warm until serving.
- Transfer to a chafing dish and serve with frilly toothpicks.

- Preheat oven to 350 degrees F (175 degrees C).
- Combine applesauce, egg, bread crumbs, and salt and pepper, with ground beef; mix until well blended. (This is best done by hand.) Form mixture into medium-sized meatballs, and roll in flour.
- Heat 1 teaspoon of oil in a large skillet over medium high or high heat. Cook meatballs, turning occasionally, until evenly browned but not cooked through. Transfer to a baking dish and set aside.
- In the same skillet, partially cook the carrots and onions over medium high heat. Add tomato juice, season to taste with salt and pepper, and bring to a boil. Reduce heat, and simmer for 5 minutes, then pour over meatballs.
- Cook, covered, in the preheated oven for 45 minutes, or until carrots are tender and meatballs are cooked through. Cook uncovered for 10 minutes before removing from the oven.
