2 baking apples, cut into 1/2-inch slices, or more to taste
½ cup packed brown sugar
¼ cup butter, melted
1 tablespoon all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x11-inch casserole dish.

1/4 cup brown sugar
1/2 teaspoon salt
1/2 cup heavy cream
1 1/4 cups mashed cooked squash, fresh or 1 (10 ounce) package frozen squash
1/8 teaspoon nutmeg
6 tablespoons butter, melted
2 eggs, beaten
1/2 cup soft white breadcrumb
1/2 cup slivered almonds

Steps:

  • Mix together applesauce, brown sugar, salt, heavy cream, squash, nutmeg, 4 Tbsp of the melted butter, and eggs.
  • Place in buttered, 1 1/2 quart, shallow casserole.

2 large butternut squash (about 4 pounds), halved, and seeds and membranes removed
1 piece ginger (about 1 inch), peeled and finely chopped
1 cup balsamic vinegar
2 tablespoons brown sugar
Vegetable oil cooking spray
2 Gala or Golden Delicious apples, cored and thinly sliced
¼ cup dried cherries, chopped

Steps:

  • Heat oven to 400°F. Slice a small piece off the skin side of each squash half, so halves sit flat. Microwave on high in a covered bowl until flesh begins to soften, 2 minutes. Gently simmer ginger, vinegar and sugar in a small saucepan over medium-low heat until liquid decreases by 1/3, 8 to 10 minutes. Remove from heat and set aside. Line 2 large baking sheets with foil and coat with cooking spray. Place squash halves skin side down on baking sheets. Arrange apple slices in cavity of each half. 2 leeks, whites only, washed and free of grit
2 teaspoons unsalted butter, room temperature
2 tablespoons Water
Pinch of kosher salt
2 cups heavy cream
1 tablespoon unsalted butter, room temperature
3 pounds summer squash
2 cups leek crema
1/4 teaspoon kosher salt
1 teaspoon freshly ground pepper
1 teaspoon thyme, chopped
1/2 cup fresh breadcrumbs
1/2 cup Parmigiano-Reggiano, grated

Steps:

  • For the leek crema: Using only the lower third of the leek, remove the root, cut lengthwise down, then dice. Melt the butter in a small saucepan over medium heat. Add the leeks and 2 tablespoons of water. Cover and cook, steaming the leeks until very tender, about 5 minutes.
  • While the leeks are steaming, slice the squash lengthwise to ¼-inch thick slices on a mandoline or with a knife, and set aside. Finish the leek crema by adding salt, then cream, and warm through.
