3/4 cup chopped walnuts
1 cup chopped dates
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup applesauce
3 tablespoons shortening
2 eggs
1 teaspoon vanilla
1 cup sugar
1 1/2 cups flour

Steps:

  • Mix the walnuts, dates, baking soda and salt in a medium bowl.
  • Microwave the applesauce in a microswave safe bowl until heated through.
  • Add shortening to the applesauce and stir until melted.
  • Add applesauce mixture to walnut mixture and mix well.
  • Let stand, loosely covered, for 20 minutes.
  • Beat the eggs in a large mixing bowl using a fork.
  • Add the vanilla, sugar and flour and mix well.
  • The mixture will be very dry.
  • ADd the walnut mixture 1.4 at a time, mixing gently after each addition.
  • Do not overbeat.
  • Spoon into a greased 9x5 loaf pan.
  • Bake at 350º for 65 minutes or until a toothpick inserted into the center comes out clean.
  • Cool in the pan for 10 minutes.
  • Invert onto a wire rack to cool completely.
  • Wrap in foil and store for 8 to 12 hours before slicing.

2 cups coarsely chopped dates (10 ounces pitted)
1/3 cup orange liqueur (recommended: Cointreau or Triple Sec)
4 tablespoons (1/2 stick) unsalted butter, at room temperature
3/4 cup light brown sugar, lightly packed
1 extra-large egg
1 teaspoon pure vanilla extract
1 tablespoon grated orange zest (2 oranges)
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 teaspoon kosher salt
3/4 cup freshly squeezed orange juice (3 oranges)
3/4 cup coarsely chopped pecans (3 ounces)
6 ounces cream cheese, at room temperature
1/3 cup granulated sugar
1 tablespoon grated orange zest

Steps:

  • Preheat the oven to 350 degrees F. Butter the bottom of an 8 1/2 by 4 1/2 by 2 1/2-inch loaf pan. Line the bottom with parchment paper, then butter and flour the pan.

½ cup raisins
1 ½ cups boiling water
2 teaspoons butter, or as needed
1 teaspoon baking soda
1 cup chopped pitted dates
7 pitted prunes, chopped
¼ cup unsalted butter, softened
1 cup sugar
1 teaspoon vanilla extract
1 egg, well-beaten
1 ¾ cups all-purpose flour
½ teaspoon salt
1 cup chopped walnuts

Steps:

  • Put raisins in a bowl. Pour boiling water over raisins; soak until raisins have flavored the water, about 20 minutes. Drain raisins, reserving the water. Discard raisins.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan with butter.
  • Bring reserved water to a boil in a small saucepan. Measure 3/4 cup boiling water into a bowl. Stir baking soda into water.

2 cups unsifted all-purpose flour
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1/4 teaspoon clove
1/4 teaspoon salt
2 eggs
1 cup light brown sugar, firmly packed
1/2 cup soft butter or 1/2 cup margarine
2 cups hot applesauce
1 cup chopped dates
3/4 cup coarsely chopped walnuts

Steps:

  • Preheat oven to 350 deg.
  • Grease well and flour a 9-by-9-by-2 inch baking pan.
