1 recipe pastry for double-crust pie
6 large Granny Smith apples, peeled and cored
½ cup butter
¾ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
3 cups water
2 cups white sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
  • On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce.   • In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.

1 lemon
1 cup sugar
1/2 cup (1 stick) butter

8 canned buttermilk biscuits

  • Preheat the oven to 375 degrees F. Peel, core and slice the apples vertically into 8 slices each. Squeeze the lemon into a bowl of water and add the apple slices to keep from turning brown. 1 tablespoon unsweetened applesauce
3 large tart apples
3 tablespoons brown sugar
cinnamon (to taste)

Steps:

  • PIE CRUST.
  • Mix flour and sugar in bowl.
  • Pour milk, vanilla, and applesauce into the same measuring cup. Do not stir.
  • Add all at once to flour.
  • Stir with fork until well mixed, then form dough into three balls.
  • With a rolling pin roll out one ball at a time between two 12-inch squares of waxed paper using short, brisk strokes until pastry is the desired size and thickness.
  • Core apples.
  • Place an apple upside down on a crust and fill empty core with brown sugar.
  • Sprinkle with cinnamon to your liking.

2 tablespoons granulated sugar
1 1/4 teaspoons kosher salt
1 cup/227 grams (2 sticks) cold, unsalted butter, cut into pieces
6 to 8 tablespoons ice water
1 large egg, lightly beaten
Turbinado sugar, for sprinkling
1/3 cup/73 grams light or dark brown sugar
3/4 teaspoon ground cinnamon
