Steps:
- *If you want to make mini muffins, bake only 10 minutes. I recommend this mini muffin pan.Whisk all liquid ingredients together. Preheat oven to 350, and line a muffin tin. In a new bowl, stir remaining ingredients very well. Pour dry into wet, and stir until just evenly mixed. Fill each liner about 2/3 of the way, leaving a little room because they will rise. Bake on the center rack, 20 minutes or until muffins have domed and a toothpick inserted into the center of a muffin comes out mostly clean. Let cool. (If you loosely cover overnight on the counter or refrigerated, the liners peel off easily the next day and flavor and texture are even better.) Leftovers can be frozen if desired. APPLESAUCE MUFFINS W/ AGAVE NECTAR
I needed to use up some applesauce my 3 year old wouldn't eat and came up with this recipe. We both loved them, so I guess I got him to eat that applesauce anyway! I love the way the edges carmelize. YUMMY! **Please see the reviews for a variation of the original recipe that should fix the rising problem.**

VEGAN AGAVE CORNBREAD MUFFINS
This vegan cornbread is made with whole-wheat flour and sweetened with agave syrup. It got votes as being better than traditional cornbread muffins by my anti-vegan roommates! They can also be made macrobiotic if you substitute the agave with maple syrup.

Tips:
- For best results, use ripe apples. This will give your muffins a sweeter, more flavorful taste.
- If you don't have agave nectar, you can substitute honey or maple syrup.
- To make your muffins even more moist, add a splash of milk or yogurt to the batter.
- If you want a muffin with a crispy top, sprinkle some sugar on top before baking.
- Be sure to not over-mix the batter. Over-mixing can make your muffins tough.
