LOW FAT APPLE BRAN MUFFINS

Low Fat Apple Bran Muffins image

I like to snack on these muffins, they're good, and they're healthy too. Add more sugar if you want it to be sweeter, since these muffins aren't very sweet. Be careful with the milk, sometimes it can be too moist, but you'll just have to bake it for a longer period of time.

Time 46m

Yield 12 serving(s)

Number Of Ingredients 7

1 1/2 cups wheat bran
1 1/4 cups fat-free buttermilk
1 cup unbleached flour
1 teaspoon baking soda
1/3 cup brown sugar
2 egg whites
1 cup chopped dried apricot

Steps:

  • Combine the bran and non fat buttermilk and let sit for 25 minutes.
  • Combine the flour, soda, brown sugar together.
  • Add the bran to the egg whites, stir well.
  • Add the wet ingredients into the dry ingredients just until all are moistened.

  • Spray your muffin tins with a cooking spray, and fill 3/4 with batter.
  • Bake 350 degrees for 16- 18 minutes, or just until a tester comes away clean.
  • Remove from oven and let sit on a rack for six minutes.
  • Then remove muffins from tins to a wire rack.

Tips:

  • To ensure your muffins are moist and fluffy, make sure not to overmix the batter. Overmixing can result in tough, dense muffins.
  • For a sweeter muffin, add 1/4 cup of sugar to the batter. You can also add 1/2 cup of chopped dried apricots for a more intense apricot flavor.
  • If you don't have a muffin tin, you can bake your muffins in a 9x13 inch baking pan. Just increase the baking time to 30-35 minutes.
  • These muffins are best served warm from the oven. However, you can also store them in an airtight container at room temperature for up to 3 days.
