APRICOT-GLAZED CARROTS

Apricot-Glazed Carrots image

Our daughter made this for us using a mixture of carrots and parsnips. Delicious!!

Provided by Marilyn Mittelstadt

Categories     Vegetables

Time 30m

Number Of Ingredients 8

2 lb carrots, cut on diagonal
3 Tbsp butter or margarine
1/3 c apricot preserves
1/4 tsp ground nutmeg
1/4 tsp salt
1/2 - 1 tsp freshly grated orange peel
2 tsp fresh lemon juice
parsley, for garnish

Steps:

  • 1. Cook scraped and cut carrots in salted water until just tender, about 20 minutes. Drain.
  • 2. Melt butter and stir in preserves until blended. Add nutmeg, salt, orange peel and lemon juice.
  • 3. Toss carrots with apricot mixture until well coated. Garnish with parsley and serve at once.
  • 4. Note: Good with Poultry or Pork.

Tips:

  • Choose the right carrots: For best results, use fresh, young carrots that are tender and sweet. Avoid carrots that are too large or have woody cores.
  • Peel and trim the carrots: Before cooking, peel and trim the carrots to remove any blemishes or tough ends.
  • Cut the carrots into uniform pieces: This will help them cook evenly. If you are using baby carrots, you can leave them whole.
  • Glaze the carrots properly: To make the apricot glaze, combine apricot preserves, honey, Dijon mustard, and lemon juice in a saucepan. Bring the mixture to a simmer over medium heat, stirring constantly. Reduce the heat to low and let the glaze simmer for 10 minutes, or until it has thickened slightly.
  • Cook the carrots until tender: Add the carrots to the glaze and cook over medium heat until they are tender, about 10 minutes. Stir the carrots occasionally to ensure that they are evenly coated with the glaze.
  • Serve the carrots immediately: Apricot glazed carrots are best served immediately, while they are still warm and tender.

Conclusion:

Apricot glazed carrots are a delicious and easy side dish that is perfect for any occasion. They are sweet, savory, and slightly tangy, and they pair well with a variety of main courses. Whether you are serving them for a weeknight dinner or a special occasion, apricot glazed carrots are sure to be a hit.
