Number Of Ingredients 6

3 tablespoons apricot preserves
1 teaspoon fresh ginger paste (such as Gourmet Garden™)
½ teaspoon minced fresh rosemary
2 (8 ounce) boneless, skinless chicken breasts
1 teaspoon vegetable oil
salt and ground black pepper to taste

APRICOT GLAZED CHICKEN BREASTS

Apricot Glazed Chicken Breasts image

A simple and quick main dish designed for busy nights or cooking novices. Add a steamed vegetable and rice and a tasty dinner is on the table in 30 minutes or less. I like to include the hot sauce not to make this a spicy dish but to cut the sweetness just a bit. Planning to try this on the grill this summer as it should work very well. (WW 4 pts)

Time 15m

Yield 4 serving(s)

Number Of Ingredients 8

vegetable oil cooking spray
3 tablespoons apricot preserves
1 tablespoon ketchup
1 teaspoon white balsamic vinegar or 1 teaspoon rice wine vinegar
2 -3 drops Tabasco sauce (optional)
4 (5 -6 ounce) boneless skinless chicken breast halves, trimmed
1/2-1 teaspoon crumbled dried thyme
salt and pepper

Steps:

  • Preheat the broiler. Line the broiler pan with aluminum foil. (The foil is a must for quick clean up.) Spray the broiler-pan rack with nonstick vegetable cooking spray.
  • In a cup, stir together the preserves or marmalade, ketchup, and vinegar. Add the tabasco if you are planning to include.
  • Season the chicken breasts with the thyme and salt and pepper. Arrange the chicken breasts, skin side down, on the prepared pan and broil 4 to 6 inches from the heat for 5 minutes. Turn and broil for 3 minutes. (If you are using larger chicken breasts, adjust the cooking time.)
  • Brush each chicken breast with some of the fruit glaze and broil for 1 to 2 minutes, until the glaze is bubbly and the chicken is no longer pink in the thickest part. Turn the chicken (it should now be skin side up) and brush on the rest of the glaze an broil an additional minute.
  • Remove from the broiler and serve.

APRICOT GLAZED CHICKEN BREASTS

Categories     Chicken     Bake

Yield 3 breasts

Number Of Ingredients 6

3 boneless skinless chicken breasts seasoned with ½ tsp. salt and pepper
1 1/2 tablespoons of vegetable oil
1 cup chicken broth
¾ cup apricot preserves
1 tsp. soy sauce
Four chopped green onions for garnish

Steps:

  • Season chicken with salt and pepper and heat oil in a large skillet over medium high heat. When oil is very hot, brown chicken breasts on each side. Once browned, remove them to a plate. Add the broth, preserves and soy sauce to the pan and bring to a boil stirring with a wire whisk so it is well combined. Boil for at least five minutes. Return chicken to the pan and baste with the apricot mixture. Reduce heat to medium low and continue cooking and spooning apricot mixture over chicken several times until chicken is no longer pink in the center. This could take up to 20 minutes depending on the thickness of the chicken breasts. Transfer chicken breasts to a plate and spoon glaze over them and garnish with chopped green onions. Serve with white rice and spoon the glaze over the rice too. Any veggie is good with this dish and the rice is yummy with the sauce.

Tips:

  • To ensure the chicken breasts cook evenly, they should be of uniform thickness. If necessary, use a meat mallet to pound the thicker portions of the breasts until they are of an even thickness.
  • To create a flavorful marinade, use freshly squeezed orange juice, olive oil, garlic, and thyme. Allow the chicken to marinate for at least 30 minutes, or up to overnight, to infuse it with flavor.
  • When searing the chicken breasts, use a heavy-bottomed skillet over medium-high heat. This will help to create a golden brown crust on the outside of the chicken while keeping the inside moist and tender.
  • To make the apricot glaze, combine apricot preserves, chicken broth, Dijon mustard, and honey in a saucepan. Bring the mixture to a simmer and cook until it has thickened slightly, about 5-7 minutes. Brush the glaze over the chicken breasts during the last few minutes of cooking.
  • Serve the apricot-glazed chicken breasts with a side of roasted vegetables or mashed potatoes. You can also garnish the chicken with fresh herbs, such as thyme or rosemary.

Conclusion:

Apricot-glazed chicken breasts are a delicious and easy-to-make dish that is perfect for any occasion. The combination of sweet and tangy apricot glaze and tender, juicy chicken is sure to please everyone at the table. With just a few simple ingredients and a little bit of time, you can create a restaurant-quality meal at home.
