Tips:

  • For the perfect apricot jam filling, choose ripe, flavorful apricots. If using fresh apricots, blanch them quickly to remove the skins easily.
  • To achieve a gooey jam center, make sure to use a thick, high-quality apricot jam. You can also make your own jam using the recipe provided in the blog post.
  • To prevent the cookies from spreading too much, chill the dough for at least 30 minutes before baking. You can also use a cookie scoop to ensure uniform sizing.
  • Bake the cookies until the edges are golden brown and the centers are set. Overbaking will dry out the cookies.
  • Allow the cookies to cool completely before enjoying them. This will help the jam center to firm up.

Conclusion:

Apricot jam cookies are a delightful treat that combines the sweetness of apricots with the buttery goodness of shortbread cookies. With their gooey jam centers and crispy edges, these cookies are sure to be a hit with people of all ages. Whether you're looking for a special occasion treat or a simple afternoon snack, these cookies are sure to satisfy your sweet tooth.
